Ingredients

  • 1 handful boiled dried radish greens (about 100g)
  • 1 can (150g) canned tuna
  • 3 Tbsp soybean paste (doenjang)
  • 1 stalk large green onion (scallion)
  • 1 Tbsp minced garlic
  • 1.5 Tbsp red pepper flakes (gochugaru)
  • 8 cups anchovy and kelp broth (about 1.6L)
  • 2 Korean green chili peppers (cheongyang peppers)

First, prepare a handful of boiled dried radish greens (sirae-namul). If you have pre-boiled greens, this step will be even quicker.

Cut the prepared dried radish greens into lengths of about 3-4 cm. Making them a manageable size will make the soup easier to eat.

Place the chopped radish greens in a pot. Prepare one large green onion, slice it diagonally, and add the white parts to the pot. Add 1 Tbsp of minced garlic and 3 Tbsp of soybean paste. Mix everything together well; pre-mixing the greens with the soybean paste can deepen the flavor.

Next, open a 150g can of tuna. Drain off most of the oil, but add both the tuna chunks and the remaining oil to the pot. The tuna oil adds a nice depth of flavor to the broth.

Add 1.5 Tbsp of red pepper flakes for a touch of heat. Pour in 8 cups (about 1.6L) of anchovy and kelp broth, ensuring all ingredients are submerged. Place the pot over high heat and bring it to a boil.

Once the soup comes to a rolling boil, reduce the heat to medium. Simmer gently over medium heat. This allows the radish greens to become tender and the flavors to meld beautifully. Let it simmer for about 10-15 minutes, or until the greens are fully softened.
