Cooking Instructions
Step 1
Gently pat the bulgogi-cut beef with paper towels to remove any excess blood. This step is crucial for eliminating any gamey odors and ensuring a clean, pure flavor in your finished dish.
Step 2
In a bowl, combine the drained beef with the oyster mushrooms. Add all the bulgogi marinade ingredients (soy sauce, corn syrup, sugar, sesame oil, minced garlic, and sesame seeds). Mix well to coat the beef evenly. Let it marinate for about 10 minutes to allow the flavors to meld and tenderize the meat.
Step 3
Wash the carrot thoroughly, peel it, and then julienne it into thin strips. These thin strips will add a refreshing crunch to your salad wrap. Cutting them thinly also ensures they are not too bulky when rolled.
Step 4
Heat about 1 teaspoon (5g) of cooking oil in a pan over medium heat. Add the marinated beef and stir-fry until it’s well-cooked and slightly crispy, ensuring there’s no excess liquid. Cooking the bulgogi until almost dry prevents the wrap from becoming soggy and concentrates its delicious flavor.
Step 5
Spread a thin layer of mayonnaise evenly over one side of the tortilla. Arrange the cooked bulgogi, julienned carrots, fresh salad greens, and sliced almonds in a line down the center of the tortilla. Carefully and tightly roll up the tortilla, tucking in the sides as you go, to create a compact and satisfying salad wrap. Don’t overfill it, especially when you’re first learning, to make rolling easier.
