A Delectable Bulgogi Japchae Sandwich with a Creamy Tofu Sauce
This sandwich was a spontaneous creation, born from a sudden craving! We’ve transformed the classic Korean ‘Japchae’ (stir-fried glass noodles) and tender beef, marinated and cooked to perfection, into a delightful sandwich filling. To complement the rich flavors, a creamy, homemade sauce made from tofu adds a fresh and light touch. Prepare for a satisfying and uniquely flavorful sandwich experience!
Sandwich Ingredients- 150g Bulgogi-style beef (thinly sliced)
- A small amount of onion, julienned
- A small amount of green onion, julienned
- 50g Glass noodles (dangmyeon), soaked in water
- 1 Croissant
- 3 Lettuce leaves
- 1/2 Tomato, sliced
- 20g Mixed nuts, chopped
- 1 slice Cheese
Marinade & Sauce- 5 Tbsp Soy sauce
- 1 Tbsp Mirin (rice wine)
- 1 Tbsp Ground coffee (or instant coffee powder)
- 1.5 Tbsp Oligosaccharide (or corn syrup)
- 1/10 block Silken tofu
- 7 tsp Soy milk
- 3 tsp Lemon juice
- 3 tsp Dijon mustard
- 2 tsp Sugar
- 1 tsp Minced garlic
- 1 tsp Minced green onion
- 5 Tbsp Soy sauce
- 1 Tbsp Mirin (rice wine)
- 1 Tbsp Ground coffee (or instant coffee powder)
- 1.5 Tbsp Oligosaccharide (or corn syrup)
- 1/10 block Silken tofu
- 7 tsp Soy milk
- 3 tsp Lemon juice
- 3 tsp Dijon mustard
- 2 tsp Sugar
- 1 tsp Minced garlic
- 1 tsp Minced green onion
Cooking Instructions
Step 1
First, let’s prepare the bulgogi marinade for our japchae filling. In a large bowl, combine the julienned onion and green onion with the bulgogi beef. Add 5 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp ground coffee, 1.5 Tbsp oligosaccharide, 1 tsp minced garlic, and 1 tsp minced green onion. Mix everything well and let it marinate for 10 to 20 minutes. The coffee adds a wonderful depth of flavor and helps tenderize the beef.
Step 2
Now, let’s make the special sauce for our sandwich. In a blender or food processor, combine 1/10 block of silken tofu, 7 tsp soy milk, 3 tsp lemon juice, 3 tsp Dijon mustard, 2 tsp oligosaccharide, and 2 tsp sugar. Blend until completely smooth and creamy. This sauce will add a refreshing tanginess.
Step 3
Prepare the remaining sandwich ingredients for texture and freshness. Finely chop the mixed nuts. Have your slice of cheese ready. Wash and tear or slice the lettuce leaves into bite-sized pieces. Thinly slice half a tomato.
Step 4
Toast the croissant. Place the croissant cut-side down in a dry, non-stick skillet over medium heat. Toast lightly until golden brown and slightly crisp. This step enhances the croissant’s buttery flavor and provides a sturdy base.
Step 5
Heat a little cooking oil in a clean skillet over medium-high heat. Add the pre-soaked glass noodles and stir-fry for about a minute until they start to soften. Then, quickly add the marinated beef and stir-fry rapidly until the beef is cooked through and the noodles are well coated with the marinade. Be careful not to overcook the beef.
Step 6
It’s time to assemble our delicious sandwich! Spread a generous layer of the creamy tofu sauce on the toasted croissant. Top with lettuce leaves, then a sprinkle of chopped nuts. Arrange the tomato slices over the lettuce, followed by a hearty portion of the bulgogi japchae filling. Add another drizzle of the sauce and the slice of cheese. Place the top half of the croissant to complete your sandwich. Serve immediately and enjoy this unique and flavorful creation!
