Savory Brown Enoki Mushroom Pancake (Jeon)
Chewy Brown Enoki Mushroom Jeon
I found some interesting brown enoki mushrooms at the market and decided to make some delicious jeon (pancake). Try making this chewy and savory enoki mushroom jeon easily at home!
Main Ingredients- 1 pack Brown Enoki Mushrooms (or regular white enoki mushrooms)
- 4 large Eggs
- A small amount of Scallions, finely chopped (for color and flavor)
- 1/2 teaspoon Savory Salt (or season with soy sauce to taste)
- A little Cooking Oil (for frying)
Cooking Instructions
Step 1
Brown enoki mushrooms seem to have a slightly richer, nuttier flavor than regular white enoki mushrooms. However, if you can’t find them, don’t worry! Regular enoki mushrooms will also make a delicious jeon.
Step 2
Trim off the tough base of the enoki mushrooms. Then, carefully separate the mushrooms into individual strands with your fingers. This helps to enhance their chewy texture.
Step 3
Gently rinse the separated enoki mushrooms under cold running water and lightly drain excess water. In a bowl, crack the 4 eggs and whisk them together with the enoki mushrooms until well combined. It’s important to ensure the mushrooms and egg mixture are evenly blended.
Step 4
For a more appealing color and a hint of freshness, finely chop some scallions and add them to the mixture. Stir everything together gently again after adding the chopped scallions.
Step 5
Season the batter with 1/2 teaspoon of savory salt. If you prefer a deeper umami flavor, you can also adjust the seasoning with soy sauce. Taste and add a little more salt if needed.
Step 6
Heat a frying pan over medium-low heat and add a little cooking oil. Ladle spoonfuls of the batter onto the hot pan to form small pancakes. Fry them until golden brown and crispy on both sides. Your delicious enoki mushroom jeon is ready! It’s best enjoyed warm.
