  • Beef Brisket 100g (thinly sliced)
  • A handful of your favorite mushrooms (e.g., King Oyster, Shiitake)
  • Green Onion 1/2 stalk
  • Assorted vegetables (e.g., onion, bell pepper) a handful
  • Pasta 1 serving (Spaghetti, Fettuccine, etc.)
  • Pasta Water 80g (water from boiling pasta)
  • Minced Garlic 6g (approx. 1.5 tsp)

Special Bulgogi Soy Sauce Marinade

  • Soy Sauce 10g (approx. 1 Tbsp)
  • Sugar 6g (approx. 1 tsp)
  • Salt 1g (a tiny pinch)
  • Honey 5g (approx. 1 tsp)
  • MSG 1 pinch (optional)

Cooking Instructions

Step 1

Prepare all ingredients. Lightly pat the brisket dry with paper towels to remove excess blood. Slice the mushrooms into bite-sized pieces and julienne the green onion. Chop other vegetables as needed.

Heat a pan over high heat. Add the brisket and quickly sear it, cooking on both sides until lightly browned. Be careful not to burn it, as brisket cooks fast. Remove the cooked brisket from the pan and set aside, leaving the rendered fat in the pan.

In the same pan with the brisket fat, add the minced garlic, prepared mushrooms, green onions, and other vegetables. Sauté over medium-low heat until the vegetables begin to soften. The fat from the brisket will infuse the vegetables with rich flavor.

Once the vegetables start to wilt, add the cooked brisket back into the pan along with the prepared Bulgogi Soy Sauce Marinade. Toss everything together to ensure the sauce evenly coats the ingredients.

Pour in 80g of pasta water. Stir and cook over medium heat until the sauce reduces and melds with the pasta water. This step will thicken the sauce and keep the pasta moist and flavorful. Adjust the consistency as needed, ensuring it doesn’t become too dry.
