Simple and Delicious Korean Side Dish: Braised Zucchini with Salted Shrimp
A side dish that’s perfect with rice! We’re making tender braised zucchini with savory fermented shrimp. The slightly crisp-tender zucchini absorbs the delicious seasoning beautifully. It’s incredibly tasty and a great way to enjoy this versatile vegetable.
Main Ingredients- 1 zucchini
- 1 green onion
- 1/2 onion
- 1 red chili pepper
- A pinch of sesame seeds
Broth- 300ml kelp broth (or anchovy broth/water)
Seasoning- 0.5 Tbsp salted shrimp (minced)
- 1 Tbsp minced garlic
- 1 Tbsp soup soy sauce (Guk-ganjang)
- 0.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp cooking wine (mirin)
- A pinch of black pepper
- 300ml kelp broth (or anchovy broth/water)

- 1 Tbsp soup soy sauce (Guk-ganjang)
- 0.5 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
Wash the zucchini thoroughly. Cut it in half lengthwise, and then,

slice it into half-moon shapes about 1cm thick. Slicing them not too thin will help maintain a pleasant texture without them becoming mushy.

Peel the onion and slice it into strips.
Step 4
Remove the seeds from the red chili pepper and slice it diagonally. Slice the green onion diagonally as well, preparing them to add color and aroma.

Let’s start braising! In a pot, place the sliced zucchini and the julienned onion first.

Now, let’s add the seasonings. Add 0.5 tablespoon of the finely minced salted shrimp for a deep umami flavor,

and 1 tablespoon of minced garlic to enhance the aroma and eliminate any unwanted odors.

Add 1 tablespoon of cooking wine (mirin) for a touch of sweetness and gloss, and 0.5 tablespoon of gochugaru for a mild spiciness.

Add 1 tablespoon of soup soy sauce for seasoning and finish with a sprinkle of black pepper to boost the overall flavor.

Carefully pour in the 300ml of kelp broth you prepared. The broth will infuse the ingredients with flavor, creating a delicious braised dish.

Place the pot over medium-high heat. Once it comes to a boil, cover with a lid, reduce the heat to medium-low, and let it simmer gently for about 10 minutes. Keep an eye on it to ensure the zucchini doesn’t become too soft.

After 10 minutes, lift the lid. If the zucchini and onion have turned translucent and are tender, they are cooked. At this stage, add the sliced green onion and red chili pepper,

and continue to simmer uncovered for about 1 more minute, allowing the flavors to meld. Turn off the heat and garnish with a sprinkle of sesame seeds for a beautiful finish! Your delicious braised zucchini with salted shrimp is ready.
