Ingredients
  • 1 block (approx. 225g) firm tofu
  • 1/2 medium onion (approx. 75g)
  • 2/3 medium carrot (approx. 50g)
  • 1/2 pack (approx. 50g) enoki mushrooms

Seasoning
  • 3 Tbsp sugar
  • 3 Tbsp soy sauce
  • 3 Tbsp fish sauce (anchovy or sand lance)
  • Sesame seeds, to taste

Cooking Instructions

Step 1

1. Prepare the Tofu: Gently pat the tofu dry with paper towels. Slice it into approximately 1.5cm thick pieces. Heat a generous amount of cooking oil in a pan over medium heat. Pan-fry the tofu slices until golden brown on both sides. This process helps remove excess moisture, allowing the sauce to penetrate better and prevents the tofu from breaking apart.

Step 2

2. Prepare the Cockles (Note: This step seems unrelated to the tofu and vegetable stir-fry recipe provided in the input and is included as per the original data.): Place the purged cockles in boiling water and stir in one direction. Once 1-2 cockles start to open, immediately remove them, shuck their shells, and prepare the cockle meat. Prepare 400g of cockle meat.

3. Slice the Vegetables: Wash and peel the carrot and onion, then slice them thinly into strips. Trim the root ends of the enoki mushrooms and separate them into smaller strands by hand.

5. Add Seasoning and Braise: Once the vegetables are slightly softened, add the seasoning ingredients: 3 Tbsp sugar, 3 Tbsp soy sauce, and 3 Tbsp fish sauce.
