Braising Tofu Ingredients- 1 block (420g) Firm Tofu
- 2-3 Tbsp Versatile Scallion Sauce
- 50g Garlic (thinly sliced)
- 200ml Anchovy-Kelp Broth
- 1 Tbsp Cooking Oil
- 1 Tbsp Perilla Oil
- A little Sesame Oil
- A little Toasted Sesame Seeds
Cooking Instructions
Step 1
First, slice the tofu into bite-sized pieces, about 1.5-2cm thick. Gently pat the tofu with paper towels to remove excess moisture; this helps prevent it from breaking apart during cooking and results in a better sear.
Step 2
Thinly slice the garlic. Heat 1 Tbsp of cooking oil and 1 Tbsp of perilla oil in a wide pan over medium-low heat. Add the sliced garlic and sauté slowly until it becomes fragrant and lightly golden. This infuses the oil with a delicious garlic aroma.
Step 3
Once the garlic is fragrant, arrange the sliced tofu in a single layer in the pan. Increase the heat to medium and sear the tofu until the surfaces are lightly golden brown.
Step 4
After one side is nicely browned, carefully flip the tofu pieces and sear the other side until golden as well. This step firms up the tofu and enhances its nutty flavor.
Step 5
With both sides of the tofu seared, spoon 2-3 Tbsp of the versatile scallion sauce over the tofu, distributing it evenly. Pour the 200ml of anchovy-kelp broth around the edges of the pan. Let it simmer over medium heat until the sauce reduces and coats the tofu.
Step 6
When the sauce has thickened and beautifully coated the tofu, turn off the heat. Drizzle with a little sesame oil and sprinkle with toasted sesame seeds. Transfer the delicious braised tofu to a serving dish and enjoy!
