Main Ingredients- 1 block Tofu (approx. 300g)
- 1/4 Onion
- 1 pack Enoki Mushrooms (approx. 100g)
- 1/2 Red Chili Pepper
Seasoning Mix- 1/2 Tbsp Dried Anchovy Powder
- 1 Tbsp Dried Shiitake Mushroom Powder
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soup Soy Sauce
- 1/3 Tbsp Minced Garlic
- 1 Tbsp Perilla Oil
- 2 Pinches Salt
- 1/2 Tbsp Dried Anchovy Powder
- 1 Tbsp Dried Shiitake Mushroom Powder
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soup Soy Sauce
- 1/3 Tbsp Minced Garlic
- 1 Tbsp Perilla Oil
- 2 Pinches Salt
Cooking Instructions
Step 1
Cut the tofu into thick slices, about 1.5 cm thick. Gently pat the tofu dry with paper towels, then sprinkle evenly with 2 pinches of salt for seasoning. Heat 1 tablespoon of perilla oil in a pan over medium heat. Sear the tofu slices on both sides until golden brown. This step helps prevent the tofu from breaking apart and adds a nutty flavor.
Step 2
Tip: Maintaining the right pan temperature is key when searing tofu. Avoid using high heat, which can burn the outside before the inside is cooked. Medium heat is perfect for achieving a nice golden crust.
Step 3
Once the tofu is golden brown on both sides, arrange the pieces neatly to one side of the pan. Thinly slice the onion and place it in the empty space next to the tofu. Prepare the enoki mushrooms by removing the root ends and separating them into smaller clumps, then arrange them on top of the onions.
Step 4
Now, let’s prepare the sauce. In a small bowl, combine the 1/2 Tbsp dried anchovy powder, 1 Tbsp dried shiitake mushroom powder, 1/2 Tbsp gochugaru, and 1 Tbsp soup soy sauce. Mix well. Sprinkle this seasoning mixture evenly over the tofu and vegetables. Pour in 1/2 cup (approx. 100ml) of water and bring to a boil over medium heat. Once it starts boiling, reduce the heat to low.
Step 5
As the sauce begins to reduce and thicken slightly, add 1/3 Tbsp of minced garlic and stir to combine. Add the thinly sliced red chili pepper for a touch of color and spice. Simmer for another minute or so until the sauce is just right. Your delicious braised tofu is ready! Serve immediately or let it cool slightly for enhanced flavor.
