A light and savory braised fish dish using semi-dried flatfish, ensuring no fishy odor. The tender texture and rich soy-based sauce make it a perfect accompaniment to rice.

Cooking Instructions
Step 1
Gently rinse the two semi-dried flatfish under running water. Pat them dry with a paper towel. You can cut them into 2-3 pieces or leave them whole. Make 2-3 diagonal slits on both sides of the fish. This helps the sauce penetrate better and shortens the cooking time.
Step 2
Peel the Korean radish and slice it thinly into flat pieces, about 1cm thick. Arrange the sliced radish at the bottom of your cooking pot. Placing radish at the bottom prevents the fish from sticking and allows it to absorb the delicious braising liquid. You can also add sliced potatoes or onions for extra flavor if you like.
Step 3
Let’s prepare a flavorful braising sauce to make your dish quick and easy! In a bowl, combine 1.5 cups of vegetable broth, 3 Tbsp soy sauce, 1 Tbsp crab soy sauce (or regular soy sauce), 1 Tbsp minced garlic, 1 Tbsp mirin, 1 Tbsp soju, 1 Tbsp ginger syrup (or 1/2 tsp minced ginger), and a pinch of black pepper. Mix everything well. Pour this prepared sauce evenly over the flatfish and radish in the pot.
Step 4
Finely chop the dried chili pepper after removing the seeds. Place the chopped chili pepper in the pot. Initially, cook uncovered over medium-high heat for about 5-7 minutes. Cooking uncovered at the beginning helps to effectively eliminate any fishy smell. Once the ingredients start to simmer, reduce the heat to medium-low, cover the pot, and let it braise for about 15-20 minutes. During the braising process, periodically spoon the sauce over the fish to ensure it absorbs the flavors evenly.
Step 5
When the flatfish is nearly cooked, add the diagonally sliced green onions and the washed minari (water parsley). Minari can become mushy if overcooked, so just toss it gently in the sauce until it wilts slightly. The fragrant minari will enhance the overall flavor of the dish. Simmer for a little longer, then turn off the heat.

Your delicious braised flatfish in soy sauce is ready to be served with a warm bowl of rice! Transfer the braised fish and vegetables to a nice serving plate.
