Autumn’s Elixir, Radish Stew: A Rice-Stealing Side Dish Without Many Ingredients!
I remember picking out the tender radish pieces from braised mackerel, thoroughly coated in sauce. If you find yourself short on time for making broth or don’t have any fish on hand, this recipe is perfect for a simple yet satisfying side dish. It requires minimal ingredients and comes together easily. Highly recommended for those who love that perfectly seasoned, melt-in-your-mouth radish!
Main Ingredients- 1.2kg Korean radish (about 1 medium)
- 2 chili peppers (green or red)
Cooking Instructions
Step 1
Peel the radish and cut it into thick slices, about 1 to 1.2cm thick. Cutting it too thin might cause it to break apart easily, so aim for a substantial thickness.
Step 2
Remove the stems from the chili peppers and slice them diagonally. In a small bowl, combine all the sauce ingredients: 3 Tbsp soy sauce, 1 Tbsp gochujang, 1 Tbsp gochugaru, 1/2 Tbsp minced garlic, 2/3 Tbsp salted shrimp, and 1.5 to 2 Tbsp corn syrup or oligodang. Mix well to create the braising sauce. The salted shrimp adds a wonderful umami depth and saltiness.
Step 3
In a wide, deep pot, arrange the sliced radish at the bottom. Place the piece of kelp and the diagonally sliced chili peppers on top of the radish. Pour the prepared braising sauce evenly over everything. Bring to a simmer over medium-high heat for 3 minutes, allowing the sauce to start penetrating the radish.
Step 4
Reduce the heat to low, cover the pot, and let it braise gently for about 13 minutes. Occasionally, gently shake the pot or use a spoon to carefully turn the radish pieces to ensure even cooking and seasoning. While braising, spoon some of the simmering sauce over the radish slices to help the flavors meld beautifully.
Step 5
Once the radish is tender and the sauce has thickened slightly, turn off the heat. Let it rest covered for an additional 5 to 10 minutes. This resting period allows the sauce to fully permeate the radish, resulting in an even richer and more delicious flavor. Serve hot with your favorite rice!
