Ingredients- 5 cups shelled raw peanuts (using a standard Korean paper cup for measurement)
- 1 Tbsp vinegar (for boiling)
Braising Liquid- 10 Tbsp soy sauce (ganjang)
- 4 Tbsp corn syrup (yori-dang) or rice syrup
- 2 Tbsp sugar
- 1 Tbsp toasted sesame seeds (for garnish)
- 10 Tbsp soy sauce (ganjang)
- 4 Tbsp corn syrup (yori-dang) or rice syrup
- 2 Tbsp sugar
- 1 Tbsp toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
Begin by thoroughly rinsing the 5 cups of shelled raw peanuts under running water. Ensure you wash them multiple times to remove any dust or debris. This step helps to reduce any potential bitterness from the peanuts.
Step 2
Place the rinsed peanuts into a pot and cover them with enough water to submerge. Add 1 tablespoon of vinegar to the water; this helps to eliminate any raw peanut odor and makes the peanuts tender. Bring the water to a boil and let the peanuts simmer for about 10 minutes. After boiling, drain the peanuts and rinse them briefly with clean water.
Step 3
Transfer the boiled peanuts to a frying pan. Add 2 cups of fresh water, 10 tablespoons of soy sauce, and 2 tablespoons of sugar to the pan. Bring the mixture to a strong boil over high heat, then reduce the heat slightly. Cook, stirring occasionally, until the liquid begins to reduce.
Step 4
As the soy sauce mixture starts to thicken and becomes less watery, stir in 4 tablespoons of corn syrup (or rice syrup). Continue to simmer over low heat, stirring constantly to prevent sticking and burning, until the sauce is glossy and slightly thickened.
Step 5
Once the sauce has reduced considerably, coating the peanuts with a glossy sheen, turn off the heat. Sprinkle 1 tablespoon of toasted sesame seeds over the peanuts and stir gently to combine. The warmth of the peanuts will help release the aroma of the sesame seeds.
Step 6
Transfer the perfectly braised peanuts to a serving dish. Your delicious and savory Braised Peanuts are now ready to be enjoyed as a flavorful side dish or a satisfying snack!
