Main Ingredients- 3 pieces of well-dried fish (choose according to your preference)
- 3 Tbsp perilla oil (deulgireum)
- 5 Tbsp cooking wine (like Mirin)
- 50ml water
Flavorful Seasoning Sauce- 2 Tbsp soy sauce
- 3 Tbsp plum extract (instead of brown sugar for sweetness and depth)
- 1 Tbsp tuna extract (for enhanced umami)
- 2 Tbsp oligosaccharide (for shine and sweetness)
- 1 Tbsp gochugaru (Korean chili flakes, adjust to spice preference)
- 2 Tbsp low-sodium soy sauce (for overall seasoning adjustment)
- 2 Tbsp perilla oil (for added nutty aroma)
- 1 Tbsp toasted sesame seeds (for finishing flavor)
- 1 Tbsp minced garlic
- 2 chopped Korean green chili peppers (for a hint of spice)

Heat a deep pan (a wok is recommended) over medium heat and add 3 tablespoons of perilla oil. Place the prepared fish pieces in the pan. Drizzle 5 tablespoons of cooking wine over the fish; this helps eliminate any fishy odors and adds a wonderful aroma.

Cook on medium-low heat for about 5-7 minutes until one side of the fish is golden brown. Keep an eye on the heat to prevent burning; cooking gently over medium-low heat is best.

Meanwhile, in a bowl, combine 2 Tbsp soy sauce, 3 Tbsp plum extract, 1 Tbsp tuna extract, 2 Tbsp oligosaccharide, 1 Tbsp gochugaru, 2 Tbsp low-sodium soy sauce, 2 Tbsp perilla oil, 1 Tbsp toasted sesame seeds, 1 Tbsp minced garlic, 2 chopped green chili peppers, a little chopped green onion, and a little chopped onion. Mix well to create the flavorful seasoning sauce. (Tip: You can make this sauce while the fish is soaking to save time!)

Carefully flip the fish pieces to the other side and cook until golden brown. Reduce the heat to low at this stage to prevent burning, and cook for another 1-2 minutes.

Once the fish is nicely browned, generously spoon the prepared seasoning sauce over the fish pieces. Pour 50ml of water gently around the edges of the pan; this will help prevent the sauce from scorching and ensure the fish braises moistly.
