Spicy and Flavorful Pan-Seared Croaker Fish
I cooked croaker fish, a dish my mother especially enjoys. She loves it when I braise it with radish. This recipe is made with care, and the tender radish absorbs the savory sauce, making it a perfect side for rice.
Main Ingredients- 3 Fresh Croaker Fish
- 1 Onion (for sweetness and aroma)
- 1/2 Scallion (for a refreshing taste)
- 3 Shiitake Mushrooms (for chewy texture)
- Radish (generous amount)
- 3 Korean Green Chilies (for a spicy kick)
- 1 Tbsp Gochugaru (Korean chili flakes, for color and spice)

- 1 Tbsp Mirin (for a clean taste, removes fishiness)
- 1 Tbsp Minced Garlic (for rich flavor)
- 1 Tbsp Fish Sauce (for deep savory notes)
- 1 Tbsp Plum Extract (for a sweet and tangy flavor)
- 1 Tbsp Soy Sauce (for umami)
- 1 Tbsp Mirin (for a clean taste, removes fishiness)
- 1 Tbsp Minced Garlic (for rich flavor)
- 1 Tbsp Fish Sauce (for deep savory notes)
- 1 Tbsp Plum Extract (for a sweet and tangy flavor)
Cooking Instructions
Step 1
First, to prevent the fish from sticking to the bottom of the pot, thinly slice the radish (about 0.5cm thick) and spread it evenly on the bottom of the pot. As the radish cooks, it will absorb the delicious sauce, making the fish even tastier.
Step 2
Arrange the cleaned croaker fish neatly on top of the prepared radish slices. Using fresh fish is key to avoiding any unpleasant fishy odors and ensuring a delicious result.
Step 3
Slice the onion thinly, and cut the scallions diagonally. Remove the stems from the shiitake mushrooms and slice them thinly or prepare them whole. If you prefer it spicier, thinly slice the Korean green chilies. Scatter these prepared vegetables over the fish.
Step 4
In a bowl, combine 1 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp minced garlic, 1 Tbsp fish sauce, and 1 Tbsp plum extract. Mix well to create a delicious sauce. Add 1 Tbsp gochugaru for a spicy flavor and vibrant color.
Step 5
Pour or brush the prepared sauce evenly over the fish and vegetables. It’s important to coat everything thoroughly so the flavors can penetrate well.
Step 6
Cover the pot and simmer over medium-low heat until the sauce has reduced and thickened, about 15-20 minutes. This allows the flavors to meld and the fish to cook through. Spooning some of the sauce over the fish occasionally will enhance the taste. You can add more sliced scallions and chilies just before serving for extra freshness and a hint of spice.
