  • 140g Sweetened Soy Milk
  • 165g Sweet Rice Flour (Glutinous Rice Flour)
  • 1 pinch Salt (approx. 1g)
  • 110g Steamed Sweet Potato (peeled, mashed)
  • 2g Baking Powder
  • 80g Dried Red Bean Paste Bits (or sweetened red bean paste)
  • 25g Sliced Almonds
  • 12g Roasted Black Sesame Powder

Cooking Instructions

Step 1

First, combine 140g of sweetened soy milk, 110g of mashed steamed sweet potato (peeled), and 65g of eggs in a blender. Blend until smooth and well combined. It’s important to blend thoroughly to ensure there are no lumps.

Step 1

Step 2

Transfer the blended mixture to a large bowl. Add 50g of granulated sugar and a pinch of salt. Whisk or stir with a spatula until the sugar and salt are completely dissolved. Ensure the wet and dry ingredients are harmoniously blended.

Step 2

Step 3

Sift 165g of sweet rice flour, 2g of baking powder, and 12g of roasted black sesame powder into the bowl with the batter. Sifting the dry ingredients is crucial to prevent lumps. Mix with a spatula or your hands until all ingredients are evenly incorporated. Gently mix to release the nutty aroma of the black sesame.

Step 3

Step 4

Add 80g of red bean paste bits and 25g of sliced almonds to the batter and gently mix. Distribute the red bean paste and almonds evenly throughout the batter. Be careful not to mix too vigorously, as this might break the red bean paste or almonds.

Step 4

Step 5

Grease a square baking pan thoroughly with oil or butter to prevent the batter from sticking. Pour all the black sesame batter into the prepared pan and level the top surface. Use a chopstick or spatula to spread the batter evenly.

Step 5

Step 6

Bake in a preheated oven at 180°C (350°F) for about 35 minutes. The baking time may vary depending on your oven. Once baked, remove the mochi from the oven, transfer it from the pan, and let it cool slightly. Before it cools completely, slice it into desired pieces to complete your delicious black sesame mochi, which will be crispy on the outside and chewy on the inside. While it’s delicious warm, it offers a chewier texture when cooled.
