  • 4 small potatoes
  • 1 slice of carrot (about 5cm)
  • 1/5 onion
  • 1 slice of apple (about 5cm)
  • 1/2 tomato
  • 1 green chili (optional)
  • 1 Tbsp flour (for fries)

Stir-fry Seasoning

  • 2 Tbsp Mirin (or cooking wine)
  • 2/3 Tbsp salt
  • 2 Tbsp sugar
  • Pinch of black pepper
  • Drizzle of olive oil

Cooking Instructions

Step 1

Prepare all vegetables and fruits. Wash the potatoes and carrots thoroughly, then peel them. Slice the onion, apple, tomato, and green chili into bite-sized pieces. You can omit the green chili if you prefer less spice.

Slice the potatoes into flat pieces, about 0.5cm thick. Pat them dry with a paper towel, place in a bowl, and toss with 1/2 Tbsp salt and 1 Tbsp sugar to season. Cut the beef into bite-sized pieces. In a separate bowl, combine the beef with 2 Tbsp Mirin, 1/2 Tbsp salt, 1 Tbsp sugar, and a pinch of pepper. Mix well and let it marinate for a short while.

Evenly coat the seasoned potatoes and sliced carrots with 1 Tbsp flour, ensuring they are lightly covered for frying. Gently shake off any excess flour.

Heat a generous amount of cooking oil in a deep pan or wok to about 170°C (340°F). (You can test the temperature by dropping a bit of the flour coating; it should sizzle and float immediately). On high heat, carefully add the floured potatoes and fry until they turn golden brown.

Remove the golden-brown potatoes and drain them on a wire rack. Add the remaining potatoes to the pan as space becomes available, frying them in batches. Avoid overcrowding the pan, as this can lower the oil temperature and result in soggy fries.

Now, fry the floured carrot slices. Carrots cook faster than potatoes, so reduce the heat to medium and fry for about 2-3 minutes, or until tender but not burnt. Drain the fried carrots on a wire rack as well.

To make the stir-fry, re-heat the pan over medium-high heat. Add the marinated beef and cook until it’s about 80% done. Adding the beef to a hot pan is crucial to seal in the juices.

Once the beef is mostly cooked, add the prepared onion, apple, tomato, and green chili to the pan. Stir-fry together for another 2-3 minutes until the vegetables soften. Finally, stir in 1 Tbsp steak sauce and 1 Tbsp ketchup, mixing everything well.

Just before turning off the heat, add 1/3 Tbsp salt (adjust to taste) and 1 Tbsp sugar to season the stir-fry. Remember to consider the salt and sugar already used in the marinades.
