  • Udon Noodles 1 serving
  • Onion 1/2 medium
  • Scallion (Green Onion) 1 stalk
  • Green Onion (larger part) 1/8 stalk
  • Bean Sprouts 1 handful (approx. 50g)
  • Egg 1

  • Garlic 2 cloves (or 2 thinly sliced cloves)

Cooking Instructions

First, peel and thoroughly wash the onion, then slice it thinly into strips.

Wash the scallions and slice them diagonally into 3-4cm lengths. Slice the larger green onion diagonally as well to add a lovely aroma.

Peel the garlic and slice it thinly or mince it. Sliced garlic will release a deeper flavor when stir-fried.

Boil the udon noodles in plenty of water according to the package directions. Immediately after cooking, rinse them under cold water (ice water is recommended) to remove excess starch. This keeps the noodles delightfully chewy.

Rinse the bean sprouts under running water. Blanch them briefly in boiling water. Be careful not to overcook, as you want to maintain their crispness.

Heat a generous amount of cooking oil in a deep pan or wok over medium-low heat. Add the sliced green onions and garlic, and slowly stir-fry until fragrant. Stir frequently to prevent burning and to extract the aromatic oils.

Once the aroma of the green onions and garlic is released, add the sliced onions and stir-fry together. Cook until the onions become translucent and release their sweetness.
