Main Ingredients- 100g beef brisket, thinly sliced
- Small piece of daikon radish (about 2cm thick), thinly sliced
- 1/4 onion, thinly sliced
- 1/4 block firm tofu, cubed
- 1/2 zucchini, sliced into half-moons
- 1 stalk green onion (about 15cm), sliced diagonally
Seasoning & Broth- 1 Tbsp homemade doenjang (Korean soybean paste), heaped

Cooking Instructions
Step 1
Prepare the vegetables that will enhance the flavor of the doenjang jjigae. Slice the daikon radish into thin strips, about 2cm thick. Thinly slice the 1/4 onion. Slice the zucchini into half-moons, and cut the tofu into bite-sized cubes. Lastly, slice the green onion diagonally into about 15cm lengths. Prepping the vegetables like this will make the cooking process much smoother.
Step 2
Heat a pot over medium heat and add the beef brisket. Stir-fry it slightly until the fat renders, releasing a delicious aroma. The key is to lightly sauté the brisket just enough to extract its flavorful oil without overcooking the meat.
Step 3
In the same pot where you stir-fried the brisket, add the sliced daikon radish and zucchini. Sauté them together for about 1-2 minutes until the radish becomes slightly translucent. Next, add 1 heaping tablespoon of homemade doenjang to the pot. Pour in 150ml of water (or use anchovy-kelp broth for an even deeper flavor). Dissolve the doenjang thoroughly, ensuring there are no clumps, and bring to a boil over high heat.
Step 4
Once the doenjang jjigae starts to boil vigorously, add the sliced onion and cubed tofu. Let it simmer for another moment until the ingredients meld together and the broth’s flavor deepens. Gently stir to prevent the tofu from breaking apart.
Step 5
When the stew boils up again, add the diagonally sliced green onions and 1/2 tablespoon of minced garlic. If you prefer a spicier taste, add 1/2 tablespoon of gochugaru at this stage. Let it simmer for another moment to allow all the flavors to combine, and your delicious beef brisket doenjang jjigae will be ready.
