Main Ingredients

  • Beef brisket 300g
  • Bean sprouts 100g
  • Perilla leaves 7-10 sheets
  • Chives 1 bunch
  • King oyster mushrooms 1 bundle
  • Onion 1/4
  • Scallions 2
  • Bell pepper 1/4
  • Flour 1 Tbsp

Peanut Sauce

  • Peanut butter 2 Tbsp
  • Soy sauce 2 Tbsp
  • Sugar 1 Tbsp
  • Oligosaccharide 1 Tbsp
  • Vinegar 1 Tbsp
  • Lemon juice 2 Tbsp

Cooking Instructions

Step 1

First, prepare all the vegetables. Wash the bean sprouts and drain them. Wash the perilla leaves and remove their stems. Wash and cut the chives into 3-4 cm lengths. Trim the ends of the king oyster mushrooms and separate them into strands. Thinly julienne the onion and bell pepper. Cut the scallions into similar lengths.

Step 1

Step 2

Place the prepared vegetables (chives, king oyster mushrooms, onion, bell pepper, scallions) in a bowl and cut them lengthwise for easy eating.

Step 2

Step 3

Lightly season the cut vegetables with salt and pepper, then gently toss them. This enhances the vegetables’ flavor.

Step 3

Step 4

Prepare the beef brisket. Lightly pat it with paper towels to remove any excess blood for a cleaner dish.

Step 4

Step 5

Place a portion of the seasoned vegetables onto a slice of beef brisket. Lightly brush flour on both ends of the brisket and roll it up tightly. The flour helps the edges stick together.

Step 5

Step 6

Take a perilla leaf, place the beef brisket and vegetable roll on top, and roll them together. The perilla leaf will infuse its aroma into the dish and help hold the roll together.

Step 6

Step 7

Prepare your steamer. Spread a generous layer of the washed and drained bean sprouts at the bottom of the steamer. The moisture released from the bean sprouts as they steam will add a lovely tenderness to the dish.

Step 7

Step 8

Arrange the perilla leaf-wrapped beef brisket rolls in the center of the steamer, on top of the bean sprouts. Place the beef brisket rolls wrapped only with vegetables on the sides. Arranging them evenly ensures they all cook properly.

Step 8

Step 9

Let’s make the rich and sweet peanut sauce! In a bowl, combine 2 Tbsp peanut butter, 2 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp oligosaccharide, 1 Tbsp vinegar, and 2 Tbsp lemon juice. Whisk well until all ingredients are smoothly incorporated.

Step 9

Step 10

For those who enjoy a bit of spice, we also recommend a horseradish sauce! Finely chop 1 Tbsp onion, 1 Tbsp scallions, and 0.5 Tbsp minced garlic. Mix them with 2 Tbsp soy sauce, 2 Tbsp water, 1 Tbsp sugar, 2 Tbsp vinegar, and 1 Tbsp horseradish. Whisk well until combined. (This step is optional.)

Step 10

Step 11

Heat the steamer over high heat. Once steam begins to rise, reduce the heat to medium and steam for about 7-10 minutes, until the beef brisket is cooked and the vegetables are tender. Check to ensure everything is cooked through. Serve with the prepared peanut sauce or horseradish sauce. Don’t discard the steaming liquid; it’s perfect for making a delicious beef brisket soybean paste stew for an even heartier meal!
