Main Ingredients
- 60g minced beef (you can also finely chop beef used for bulgogi or stew)
- 270g boiled quail eggs (about 15-20 eggs)
- 150ml clear broth (anchovy-kelp broth or rice water)
Cooking Instructions
Step 1
First, press the minced beef with paper towels to drain any excess blood. Properly draining the blood is key to making a clean-tasting soy-braised dish without any gamey smell.

Heat a frying pan over medium heat. Add the drained minced beef and stir-fry. Use chopsticks or a spatula to break up the meat and ensure it doesn’t clump together as you cook.

Once the beef is somewhat cooked, add 1 Tbsp of minced garlic and continue to stir-fry for about 1 minute until the garlic becomes fragrant. The savory aroma of garlic will enhance the flavor.

When the beef is fully cooked, pour in 150ml of the prepared clear broth and bring it to a boil. As the broth reduces, it will infuse the beef with delicious umami.

Now, add all the peeled, boiled quail eggs. Gently place them in the pan to avoid breaking. Stir them carefully during cooking to prevent them from sticking or breaking.

Add 1 Tbsp of soy sauce for seasoning. You can adjust the amount of soy sauce according to your preference.

Add 1 Tbsp of mirin or cooking wine. Mirin effectively removes any gamey odor from the beef, further enhancing the dish’s flavor profile.

Reduce the heat to medium-low and let it simmer, allowing the sauce to thicken and coat the quail eggs and beef. Stir occasionally, scraping the bottom of the pan to prevent sticking. It’s almost ready when the sauce becomes slightly thick and glossy.

Once the sauce has reached your desired consistency, turn off the heat and drizzle in 1 Tbsp of sesame oil for a nutty aroma. Adding sesame oil after turning off the heat preserves its fragrance.
