Cooking Instructions
Step 1
Prepare 400g of fresh bulgogi-cut beef. Place it on paper towels and gently pat to remove any excess blood. This step ensures a clean and pure flavor without any gamey notes.
Step 2
Peel and thoroughly wash the 1/2 onion. Slice it into 0.5cm thick strips. These will add a natural sweetness as they cook.
Step 3
Clean and peel the 1/4 carrot. Slice it into thin strips, similar in thickness to the onion. This will add a vibrant color, a delightful crunch, and boost the nutritional value of the dish.
Step 4
Wash and trim the outer layers of the 1/2 green onion stalk. Cut it diagonally into 3-4cm pieces. Added towards the end, these will impart a wonderful fresh aroma.
Step 5
Trim the base of the 1/2 pack of king oyster mushrooms and rinse them clean under running water. They become wonderfully tender when stir-fried.
Step 6
Gently separate the leaves of the 5 heads of bok choy, trimming the base slightly. Wash them thoroughly. They contribute a crisp texture and a fresh, clean flavor.
Step 7
Rinse the 100g of bean sprouts under cool running water and drain them well in a colander. Having all your vegetables prepped and ready will streamline your cooking process.
Step 8
Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and 1/2 tsp of minced ginger. Sauté until fragrant, allowing their aromas to infuse the oil. This aromatic base is crucial for flavor.
Step 9
Add the patted-dry beef to the pan. Sprinkle with black pepper. Increase the heat to medium-high and stir-fry the beef, breaking it apart with your spatula, until it’s just browned on the outside. Cooking quickly over high heat helps to seal in the juices.
Step 10
Once the beef is mostly cooked, add the prepared onion, carrot, king oyster mushrooms, and bok choy to the pan. Stir-fry everything together until the vegetables are slightly tender but still retain some crunch.
Step 11
Now for the star flavor! Pour 2 Tbsp of oyster sauce around the edges of the pan, allowing it to caramelize slightly before mixing. Once the vegetables begin to soften, drizzle in 1 Tbsp of sesame oil for added gloss and nutty flavor. Toss everything gently to ensure an even coating.
Step 12
And there you have it! A simple yet incredibly flavorful beef bulgogi and bean sprout stir-fry, masterfully seasoned with just oyster sauce. Serve hot over steamed rice for a truly satisfying meal.
