- Soy Sauce 3 Tbsp
- Oyster Sauce 2 Tbsp
- Sugar 2 Tbsp
- Mirin (or Rice Wine) 1 Tbsp
- Black Pepper, a pinch (to taste)
- Cornstarch Slurry 2 Tbsp (mix 2 Tbsp water with 1 Tbsp cornstarch)
- Toasted Sesame Seeds 1 Tbsp (for nutty aroma)
- Sesame Oil 1 Tbsp (for fragrant finish)
Cooking Instructions
Step 1
First, gently pat the beef slices with paper towels to remove excess moisture. Cut the beef into bite-sized pieces, about 3-4 cm. Slicing them to this size ensures even cooking and better flavor absorption.
Step 2
Rinse the fresh bean sprouts lightly under cold running water and drain them well. Avoid washing them excessively, as this can diminish their crisp texture.
Step 3
Thinly slice the scallion diagonally, separating the white and green parts. Julienne the carrot into thin strips. These vibrant vegetables not only add flavor but also visual appeal to the dish.
Step 4
In a small bowl, combine the soy sauce, oyster sauce, sugar, mirin, and black pepper. Stir well until the sugar is dissolved to create your seasoning sauce. Having the sauce pre-mixed makes the stir-frying process much smoother.
Step 5
Heat a tablespoon of cooking oil in a wok or large skillet over high heat. Add the prepared beef and stir-fry quickly until it’s just browned on the outside. Avoid overcooking to keep the beef tender.
Step 6
Once the beef is partially cooked, add the bean sprouts, sliced scallions, and julienned carrots to the pan. Continue to stir-fry over high heat. This rapid cooking helps maintain the crispness of the bean sprouts and vegetables.
Step 7
When the ingredients are almost cooked through, pour in the prepared seasoning sauce and toss everything to coat evenly. Stir-fry for another minute, then add the cornstarch slurry. Cook, stirring, until the sauce thickens and becomes glossy. Finally, drizzle with toasted sesame oil and sprinkle with sesame seeds, giving it a final quick toss. This creates a beautiful sheen and enhances the aroma.
Step 8
Transfer the delicious Beef and Bean Sprout Stir-Fry to a serving plate. This dish is perfect served hot alongside steamed rice, or you can use it as a flavorful filling for fresh Vietnamese spring rolls for a lighter meal.
