Easy Bacon and Chive Potato Pancakes Using a Grater (with Grating Tips!)
Craving a delicious way to enjoy seasonal potatoes? While potato pancakes with shredded potatoes are great, today we’re making something special: ‘Bacon and Chive Potato Pancakes’ packed with flavor from crispy bacon and aromatic chives. The texture of your potato pancake can vary depending on how you prepare the potatoes, but grating them finely before frying will result in a wonderfully soft and moist pancake. The savory saltiness of the bacon, the freshness of the chives, and the comforting taste of potatoes all come together for a flavor explosion you won’t be able to stop eating! They’re also incredibly easy to make, perfect for a simple meal or a delightful snack with makgeolli (Korean rice wine).
Ingredients- 130g Bacon
- 70g Chives
- 385g Potatoes (about 2-3 medium-sized)
- 90g Pancake Mix (Buchim Garu)
- 90g Water
- Olive Oil (or cooking oil)
Cooking Instructions
Step 1
First, peel the potatoes and rinse them thoroughly under running water. Make sure to wash them well to remove any dirt or debris.
Step 2
Cut the fragrant chives into bite-sized pieces, about 2-3 cm long. Cutting them too finely might reduce their texture, so aim for a moderate size.
Step 3
Cut the bacon into your desired thickness and size. Typically, cutting it into 1-2 cm strips makes it cook nicely within the pancake.
Step 4
Now, it’s time to grate the potatoes. Be very careful when using a grater to avoid cutting yourself. A great tip is to skewer the potato onto a fork before grating, or wear thick vinyl or cooking gloves. Grate the potatoes until they are finely shredded but not completely mashed.
Step 5
Combine the chopped chives, sliced bacon, and grated potatoes in a mixing bowl. We’re now ready to prepare the batter.
Step 6
Add the pancake mix and water to the grated potatoes to create the batter. You can add an egg for extra richness, but it’s also delicious without it. An important note: do not add extra salt at this stage. The bacon is naturally salty and will season the entire pancake perfectly. If you find it needs a touch more salt after tasting, you can add a tiny pinch.
Step 7
Using a spatula or spoon, mix the batter thoroughly until there are no lumps and all ingredients are evenly combined. Ensure the pancake mix is fully dissolved and everything is well incorporated.
Step 8
Heat a frying pan over medium heat and add a generous amount of olive oil or cooking oil. Having enough oil is key to preventing the pancake from sticking and ensuring it cooks up crispy.
Step 9
Using a ladle, scoop about a portion of the batter and spread it thinly onto the hot pan. Spreading it too thick can make it difficult to cook through, so aim for an even layer. Cook over medium heat for about 2 minutes until the bottom is golden brown.
Step 10
Once the bottom is nicely browned, carefully flip the pancake with a spatula. Cook the other side for about 1-2 minutes until golden brown. Your delicious Bacon and Chive Potato Pancakes are ready! They are best enjoyed hot off the pan.
