On this rainy, gloomy day, how about a delightful ‘Bibim Guksu’ that’s bursting with flavor? We’ll toss refreshing noodles with a sweet and tangy sauce, top it with crisp aged kimchi, and add some perfectly pan-fried Prime Bacon for an absolutely irresistible summer treat. Let’s refresh our appetites together with this special dish!
Main Ingredients- Prime Bacon, 2 strips
- Somen noodles, 130g
- Well-fermented aged kimchi, 130g
- Egg, 1
Cooking Instructions
Step 1
First, prepare the topping by boiling the egg until fully cooked. Peel it and then cut it into 4 wedges.
Step 2
Now, let’s make the delicious sweet and tangy sauce for our bibim guksu. In a bowl, combine 2 Tbsp of aged kimchi juice, 1.5 Tbsp of gochujang, 1/2 Tbsp of soy sauce, and 1.5 Tbsp of oligodang. Mix these well. For added aroma, stir in 1/2 Tbsp of perilla oil and 1 Tbsp of sesame seeds. Whisk everything together thoroughly until the sauce is smooth and well-combined.
Step 3
Take the crisp, well-fermented aged kimchi and rinse it lightly under running water to slightly reduce its spiciness. Then, thinly slice it into strips. It’s important to cut the kimchi into bite-sized pieces so it’s easy to eat when mixed with the noodles.
Step 4
Cook the somen noodles in plenty of boiling water for about 3 to 4 minutes. It’s crucial to prevent the noodles from becoming mushy and to maintain their chewy texture. Once cooked, immediately rinse the noodles under cold water, preferably ice-cold water, to quickly cool them down. This will make the noodles even more springy and chewy.
Step 5
Heat a non-stick frying pan over medium heat. Do not add any oil. Place the Prime Bacon strips in the pan and cook them until they are golden brown and slightly crispy on both sides, flipping them occasionally. You can dab away any excess bacon grease with a paper towel for a cleaner taste.
Step 6
Place the chewy somen noodles in a serving bowl. Generously top the noodles with the shredded aged kimchi. Now, pour the prepared sauce all over the noodles and kimchi. Gently mix everything together until the noodles, kimchi, and sauce are evenly combined.
Step 7
Finally, arrange the boiled egg wedges on top of the mixed bibim guksu. Add the pan-fried bacon pieces. The delightful crunch of the kimchi, the bright sweet and tangy sauce, and the savory bacon create a truly satisfying meal. Your delicious Bacon Bibim Guksu is now ready to be enjoyed!
