  • Frying mix (Twigim garu): 1 cup

Cooking Instructions

Step 1

First, let’s prepare the chili peppers. Halve the green and red chili peppers, lightly scrape out the seeds, and then slice them thinly into strips about 0.3cm wide. This will add color and a pleasant mild heat to your pancake.

Step 2

Next, prepare the fresh chives. Wash the chives thoroughly and pat them dry. Cut them into manageable pieces, about 3cm in length. Cutting them to this size makes them easier to cook and eat in the pancake.

Step 3

Now for the star ingredient, bacon! If using frozen bacon, make sure to thaw it first. Cut the bacon into pieces about 1cm wide. As the bacon cooks, it will release its delicious rendered fat, making the pancake even more flavorful.

Step 4

Time to make the pancake batter! In a large bowl, combine 1 cup of pancake mix and 1 cup of frying mix. Gradually add 2 cups of water while whisking. Mix until the batter is smooth and there are no dry lumps of flour visible. A smooth batter ensures an evenly cooked pancake.

Step 5

Add the prepared sliced chili peppers, chives, and bacon to the batter. Gently mix everything together with chopsticks or a spatula, ensuring that all the ingredients are well coated with the batter. Be careful not to overmix, just stir until combined.

Step 6

Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is hot, ladle portions of the batter onto the pan, spreading them thinly to form round pancakes. Cook until the bottom is golden brown and crisp, then flip and cook the other side until equally golden and the bacon is crispy. Ensure the bacon is cooked through and slightly crisp for the best texture.

Step 7

Once both sides are beautifully golden brown and the bacon is delightfully crispy, your Bacon and Chive Pancake is ready! Serve immediately while warm for a wonderful contrast of crispy exterior and tender interior. For an extra touch, you can serve it with a simple dipping sauce made from soy sauce, vinegar, and a pinch of red pepper flakes.
