- 1 medium onion
- 2 shiitake mushrooms
- 1/2 medium carrot
- 2 eggs
- 2-3 bowls of cooked rice (warm)
Seasoning & Others- 2 Tbsp cooking oil or canola oil
- 2 Tbsp soy sauce
- 2 Tbsp sesame oil or perilla oil
- Ketchup (optional, to taste)
- 2 Tbsp cooking oil or canola oil
- 2 Tbsp soy sauce
- 2 Tbsp sesame oil or perilla oil
- Ketchup (optional, to taste)
Cooking Instructions
Step 1
First, let’s prepare the vegetables and ham that will give our fried rice its delicious flavor. Peel and finely dice the onion, carrot, and shiitake mushrooms. Dice the ham (luncheon meat) into bite-sized pieces as well. Finely chopping everything ensures even cooking and distribution within the rice, leading to a better texture. ♡
Step 2
Now, let’s start stir-frying! Heat 2 tablespoons of cooking oil or canola oil in a pan over medium-high heat. Add the ingredients in this order: first the carrots, stir-fry briefly, then add the ham and cook together. Next, add the shiitake mushrooms and sauté until fragrant. Finally, add the diced onions and cook until they become translucent. Stir-frying in this sequence helps to preserve the texture and enhance the flavor of each ingredient. ♡
Step 3
Prepare the eggs to add a soft texture to your fried rice. Crack 2 fresh eggs into a bowl and lightly whisk them. Removing the chalaza (the stringy part) can result in an even smoother texture. ♡
Step 4
Push the sautéed vegetables and ham to one side of the pan. Pour the whisked egg into the empty space and scramble it. Once the eggs are halfway cooked, gently stir with chopsticks or a spatula to create soft curds. Cooking the eggs first before adding the rice prevents the rice from clumping and helps achieve a fluffy texture. Mix the cooked eggs with the sautéed ingredients. Add 2-3 bowls of warm cooked rice. Use a spatula to gently break up the rice grains and stir-fry until well combined. Warm rice is easier to separate. Now, pour 2 tablespoons of soy sauce around the edges of the pan and stir-fry, allowing the soy sauce to caramelize slightly. This adds a deeper flavor. Continue to stir-fry until the rice grains are glossy and all ingredients are evenly distributed. ♡
Step 5
Finally, drizzle in 2 tablespoons of sesame oil or perilla oil for a nutty aroma and give it a final toss. Transfer the finished fried rice to a serving plate. For an extra touch of flavor, you can top it with ketchup to your liking, adding a sweet and tangy contrast. If you enjoy a bit of spice, feel free to add some kimchi or gochujang while stir-frying for a delicious variation. Enjoy your meal! ♡♡♡♡
