Create succulent and tender pork bulgogi at home with this easy recipe using pork shoulder. The harmony of sweet vegetables and savory sauce is outstanding, making it a perfect dish for any meal or as a delightful accompaniment to drinks.
Main Ingredients- Pork Shoulder (for Bulgogi) 1 handful (approx. 150-200g)
- Cabbage 1/4 head (about a handful, cut into large pieces)
- King Oyster Mushroom 1/2 (sliced thinly)
- Garlic 3 cloves (thinly sliced)
- Green Chili Pepper 1/2 (optional, diagonally sliced)
- Olive Oil 1/2 Tbsp
Seasoning- Mirin (or cooking wine) 1 Tbsp
- Soy Sauce 2 Tbsp
- Minced Ginger 1/5 Tbsp (or a pinch of ginger powder)
- Black Pepper to taste (a few grinds)
- Toasted Sesame Seeds 1 Tbsp

Cooking Instructions
Step 1
First, prepare the pork shoulder for bulgogi. Gently pat dry any excess moisture with a paper towel for a cleaner taste without any gamey odor.
Step 2
In a bowl, combine the pork with 1 Tbsp of mirin, 2 Tbsp of soy sauce, 1/5 Tbsp of minced ginger, and a few grinds of black pepper. Gently mix with your hands until the marinade is evenly coated, then let it marinate for a short while.
Step 3
Prepare the vegetables. Cut the cabbage into large, bite-sized pieces similar in size to the pork. Slice the king oyster mushrooms in half lengthwise, then thinly slice them crosswise.
Step 4
Slice the garlic thinly (about 0.3cm thick) for a pleasant texture. If your ginger is roughly chopped, mince it finely for enhanced flavor. (Finely minced ginger releases more aroma.)
Step 5
Now, let’s start cooking. Heat a pan over medium-high heat. Spread the marinated pork evenly in the hot pan. Separate the pieces if they clump together, and stir-fry until both sides are golden brown and nicely seared.
Step 6
While the pork is cooking, you can stir-fry the prepared cabbage and king oyster mushrooms. Either in a separate pan or on one side of the pan if you’ve temporarily removed the pork, add about 1/2 Tbsp of olive oil and stir-fry the vegetables until they are slightly softened. (Cooking vegetables separately can help prevent excess water from accumulating.)
Step 7
Once the vegetables are partially cooked, add the sliced garlic and continue to stir-fry everything together. Cook until the garlic is fragrant and the ingredients are well combined. Taste the bulgogi and adjust the seasoning with a pinch of salt or a little more soy sauce if needed.
Step 8
For a touch of heat, add the diagonally sliced green chili peppers towards the end of cooking and stir-fry briefly. Adjust the amount of chili peppers to your preference.
Step 9
When all the ingredients are cooked through and the flavors have melded beautifully, turn off the heat. Sprinkle 1 Tbsp of toasted sesame seeds over the bulgogi for a final nutty aroma. Your delicious pork bulgogi is now ready to enjoy!
