On Lunar New Year’s Day, when it feels incomplete with just traditional namul (seasoned vegetables), here’s a super simple pork neck bulgogi recipe that comes together in a flash! We’re using tender pork neck, a favorite of kids, which results in an incredibly rich flavor. The sweet and savory special soy sauce marinade deeply infuses the meat, creating an irresistible taste that will have you devouring a bowl of rice. It’s particularly fantastic when paired with the namul dishes for Lunar New Year’s. You can enjoy it piled on top of bibimbap or wrapped in lettuce leaves. Main Ingredients- Pork neck, thinly sliced for bulgogi – 600g
- Onion – 1 medium
Special Soy Sauce Marinade- White wine – 2 Tbsp
- Minced garlic – 1 Tbsp
- Oyster sauce – 2 Tbsp
- Soy sauce (adjust to taste) – 4 Tbsp
- Honey (adjust to taste) – 4 Tbsp
- Green onion (chopped) – adequate amount
- Sesame seeds – a pinch
- Black pepper – a dash
- White wine – 2 Tbsp
- Minced garlic – 1 Tbsp
- Oyster sauce – 2 Tbsp
- Soy sauce (adjust to taste) – 4 Tbsp
- Honey (adjust to taste) – 4 Tbsp
- Green onion (chopped) – adequate amount
- Sesame seeds – a pinch
- Black pepper – a dash
Cooking Instructions
Step 1
First, wash and peel the onion. Slice it thickly, about 0.5cm, into large pieces. Slicing it this way will ensure it retains a pleasant texture when cooked.
Step 2
Heat a wide pan or wok over medium heat. Add the thinly sliced pork neck for bulgogi and stir-fry until the surfaces turn white. If there’s excess fat, you can gently blot it with a paper towel for a lighter taste.
Step 3
Once the pork changes color, add 2 tablespoons of white wine. This helps to remove any gamey smell and adds a wonderful depth of flavor. Stir-fry until the wine has mostly evaporated. Then, add 1 tablespoon of minced garlic and cook until fragrant.
Step 4
Now, it’s time to add the delicious soy sauce marinade ingredients in order. Add 2 tablespoons of oyster sauce, 4 tablespoons of soy sauce, and 4 tablespoons of honey. Stir well to combine everything as you cook. Feel free to adjust the amounts of soy sauce and honey according to your preference. (Add more honey for a sweeter taste, or a bit more soy sauce for a saltier flavor.)
Step 5
Add the sliced onion to the pan and stir-fry with the pork until the sauce is evenly distributed and the onions begin to soften. Once the onions turn translucent, turn off the heat. Stir in the chopped green onions, sesame seeds, and a dash of black pepper. Adding the green onions at the end preserves their fresh aroma.

Transfer the bulgogi to a preheated cast-iron skillet or serving plate for a sizzling presentation. The sound of it sizzling will surely whet your appetite! It’s best enjoyed immediately while it’s hot. Serve it with freshly steamed rice for a truly satisfying meal.
