A Delicious Snack You Can’t Stop Eating: Corn Mayo-Soy Glaze Recipe
This recipe is perfect for using up leftover boiled sweet corn. Kernels are separated and simmered in a sweet and savory soy sauce and mayonnaise mixture, creating a snack so good you’ll eat it with a spoon, reminiscent of corn cheese. It’s simple yet satisfying and sure to please everyone’s palate.
Main Ingredients- 700g sweet corn (boiled kernels)
Glazing Sauce- 4 Tbsp soy sauce (for braising)
- 1 tsp oyster sauce
- 2 Tbsp oligosaccharide
- 300ml water (approx. 1.5 cups)
- 2 Tbsp acacia honey (adjust sweetness to taste)
- 3 Tbsp mayonnaise
- 1 Tbsp toasted sesame seeds
- Pinch of dried parsley
- 4 Tbsp soy sauce (for braising)
- 1 tsp oyster sauce
- 2 Tbsp oligosaccharide
- 300ml water (approx. 1.5 cups)
- 2 Tbsp acacia honey (adjust sweetness to taste)
- 3 Tbsp mayonnaise
- 1 Tbsp toasted sesame seeds
- Pinch of dried parsley
Cooking Instructions
Step 1
First, separate the kernels from the boiled sweet corn. Gently rinse the corn kernels under cold water once or twice to remove any debris, then drain thoroughly in a colander. (Tip: Soaking the corn kernels in cold water for about 30 minutes can make them more tender and moist.)
Step 2
In a small bowl, combine 4 Tbsp soy sauce, 1 tsp oyster sauce, and 2 Tbsp oligosaccharide. Whisk well until all ingredients are evenly blended to prepare the sauce.
Step 3
Place the prepared corn kernels into a pot or deep skillet. Pour the prepared soy sauce mixture over the corn, and add 300ml of water. Bring to a boil over high heat, stirring continuously with a spatula to ensure the sauce coats the corn evenly. Continue to simmer until the liquid has reduced and the corn is glossy, being careful to prevent burning.
Step 4
Once most of the liquid from the soy sauce mixture has evaporated and the corn appears glossy, add 3 Tbsp mayonnaise. Gently stir and break up any clumps to evenly mix the mayonnaise with the corn and sauce. The addition of mayonnaise will add a rich, creamy flavor.
Step 5
After the corn and mayonnaise are well combined, add 2 Tbsp acacia honey and adjust the sweetness to your preference. Honey will add a savory depth and a more appealing sheen.
Step 6
Once all cooking is complete, turn off the heat. Sprinkle 1 Tbsp toasted sesame seeds and a pinch of dried parsley over the finished Corn Mayo-Soy Glaze for garnish.
