Easy & Delicious Korean Side Dish: Simple Braised Radish
Summer radishes can sometimes lack the sweetness and refreshing taste of winter ones, often developing a slightly tough texture. This recipe transforms a simple radish into a wonderfully savory and subtly sweet braised dish, perfect for stimulating your appetite on hot days. It’s a versatile side that’s great for both children and elders.
Main Ingredients- 400g Radish (about 1/3 of a medium radish)
- 1 Green Chili Pepper
- A pinch of Bonito Flakes
- A bit of Scallion
Seasoning Mix- 1 Tbsp Soy Sauce
- 2 Tbsp Fish Sauce (anchovy or tuna extract)
- 1 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Rice Wine or Mirin
- 1 Tbsp Cooking Oil
- 2 cloves Garlic, minced
- 1 Tbsp Soy Sauce
- 2 Tbsp Fish Sauce (anchovy or tuna extract)
- 1 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Rice Wine or Mirin
- 1 Tbsp Cooking Oil
- 2 cloves Garlic, minced
Cooking Instructions
Step 1
First, wash the radish thoroughly and cut it into thick, approximately 2cm slices. Slicing them a bit thicker prevents them from breaking apart during cooking, ensuring a better texture.
Step 2
Place the sliced radish in a thick-bottomed pan or pot. Add 1 cup of water and bring it to a boil. At this stage, you can add the green chili pepper, halved lengthwise, for a subtle hint of spice that cuts through richness and adds a clean finish.
Step 3
While the radish is cooking, prepare the delicious seasoning mix. In a bowl, combine 1 Tbsp soy sauce, 2 Tbsp fish sauce, 1 Tbsp oligosaccharide, 2 Tbsp rice wine or mirin, 1 Tbsp cooking oil, and 2 minced cloves of garlic. Mix well until everything is evenly incorporated.
Step 4
Once the radish becomes translucent and is about halfway cooked, pour in the prepared seasoning mix. Reduce the heat to low and let it simmer gently, allowing the radish to absorb the flavors. If it seems too dry during the simmering process, add another half cup of water to prevent the radish from sticking or burning.
Step 5
When the sauce has reduced and is almost dry, carefully flip the radish slices. Spoon the sauce over them, continuing to simmer until the radish is glossy and well-coated with the glaze. Finally, garnish with a sprinkle of bonito flakes and finely chopped scallions for enhanced aroma and visual appeal. Your delicious braised radish is ready to be served!
