Surprisingly popular, braised raw peanuts are a staple in many Korean side dish shops. They make a great snack when you’re feeling peckish, or a delightful accompaniment to a cold beer with their savory-sweet flavor. They’re also a wonderful side for rice. This recipe is simple and straightforward, so follow along and make some delicious braised peanuts!
Main Ingredients- 110g raw peanuts
- 200ml water
Cooking Instructions
Step 1
First, prepare your fresh raw peanuts. Rinse them lightly under running water. Then, place the peanuts in boiling water and blanch for about 5 minutes. This step helps to remove any bitterness and makes the peanuts tender for braising.
Step 2
After blanching, immediately rinse the peanuts under cold water to cool them down. Drain them thoroughly using a sieve, allowing excess water to drip away. Properly draining the peanuts is key for the sauce to be absorbed well and result in a tastier dish.
Step 3
Now, let’s start braising the peanuts. In a pot, combine the drained peanuts with 200ml of water. Add 2.5 Tbsp of soy sauce and 0.5 Tbsp of sugar. These are the foundational seasonings that will infuse the peanuts with flavor.

Bring the mixture to a boil over medium-high heat. Once it starts boiling, reduce the heat to low. Simmer gently, and skim off any foam that rises to the surface. This will result in a cleaner, more refined sauce.

Stir the peanuts occasionally to ensure they are evenly coated and flavored by the sauce. After simmering for about 6 to 7 minutes, the liquid should reduce to about 3 to 4 tablespoons, becoming more concentrated. This is a crucial stage where the peanuts begin to absorb the flavors.

When the sauce has significantly reduced, add 1 Tbsp of oligosaccharide or corn syrup and 0.5 Tbsp of sesame oil. Increase the heat to medium and stir continuously to prevent sticking or burning. Continue to cook until the sauce is thick, glossy, and almost completely absorbed, leaving little to no liquid at the bottom.
Step 7
Once the braised peanuts look moist and beautifully glossy, turn off the heat. For a final touch of aroma and flavor, sprinkle a generous amount of sesame seeds over the finished dish.
