This recipe features tender and chewy chicken drumsticks coated in a delicious sweet and savory soy sauce glaze. The addition of sweet potatoes and green onions, which help eliminate any gamey odor from the chicken, creates a rich soy sauce broth. Chicken Drumstick Marinade

  • 1 Tbsp Mirin (or cooking sake)
  • 1 Tbsp minced garlic
  • Pinch of ginger powder (or 1/2 tsp grated ginger)
  • Pinch of black pepper

Braised Chicken Glaze

  • 10 Tbsp water
  • 6 Tbsp soy sauce (Guk-ganjang or Jin-ganjang)
  • 4 Tbsp corn syrup (or rice syrup)
  • 2 Tbsp Mirin (or cooking sake)
  • Pinch of ginger powder (or 1/2 tsp grated ginger)
  • 1 Tbsp sesame oil
  • Pinch of sesame seeds

Cooking Instructions

Step 1

First, thoroughly wash the chicken drumsticks under running water and pat them completely dry with paper towels. Make 2-3 shallow cuts on the surface of each drumstick. This helps the sauce penetrate better and enhances the flavor.

Place the prepared chicken drumsticks in a bowl. Add the marinade ingredients: 1 Tbsp Mirin, 1 Tbsp minced garlic, a pinch of ginger powder, and a pinch of black pepper. Mix well to coat the chicken evenly. Let it marinate in the refrigerator for at least 30 minutes to allow the flavors to absorb.

Peel the sweet potatoes and cut them into bite-sized pieces, about 2-3 cm, similar in size to the chicken drumsticks. Cut the green onion into large diagonal pieces or 2-3 cm lengths.

In a small bowl, combine all the glaze ingredients: 10 Tbsp water, 6 Tbsp soy sauce, 4 Tbsp corn syrup, 2 Tbsp Mirin, and a pinch of ginger powder. Stir well until the sugar and corn syrup are completely dissolved.

In a deep pot or Dutch oven, arrange the cut sweet potatoes and the marinated chicken drumsticks. Pour in enough water (about 1 cup) to partially cover the ingredients. Bring to a boil over high heat.

Keep the lid off the pot and maintain high heat. As it comes to a boil, skim off any impurities or foam that rise to the surface for a cleaner broth. After boiling over high heat for about 5 minutes, reduce the heat to medium.

Continue to simmer over medium heat with the lid off for about 15-20 minutes, allowing the sauce to thicken and coat the chicken. Stir occasionally or gently shake the pot to prevent the sauce from sticking and burning, and to ensure even coating. After about 15 minutes, check if the chicken and sweet potatoes are cooked and the sauce has reduced to a desired consistency.

Once the sauce has thickened, add the prepared green onions to the pot. Cook for another 2 minutes over medium-high heat to let the onion flavor infuse. Finally, stir in 1 Tbsp of sesame oil and a pinch of sesame seeds for extra flavor and aroma. Turn off the heat. Your delicious braised chicken drumsticks are ready to serve!
