Main Ingredients- 200g burdock root
- 1 sheet fish cake (oden)
- 1/8 red bell pepper
- 1/8 yellow bell pepper
- 1/8 onion
- A small amount of green onion
- A pinch of sesame seeds
- A little cooking oil
Seasoning Ingredients- 3 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp sesame oil
- 3 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, thoroughly wash the burdock root. Scrub away any dirt with a brush. Then, thinly julienne the burdock root into approximately 2-3mm thick strips. Cutting them too thin might cause them to break apart during cooking, so aim for a moderate thickness.
Step 2
To remove any bitterness and improve the texture, blanch the julienned burdock root in boiling water with 1-2 drops of vinegar for about 3 minutes. Be careful not to overcook, as it can become too soft. After blanching, rinse the burdock root under cold water and squeeze out any excess moisture.
Step 3
Heat a little cooking oil in a pan over medium-low heat. Add the squeezed burdock root and stir-fry. Once the burdock is slightly cooked, add 3 Tbsp soy sauce, 2 Tbsp sugar, and 1 Tbsp sesame oil. Stir well to ensure the seasoning is evenly distributed. Keep the heat on medium-low to prevent burning.
Step 4
Cut the fish cake into bite-sized pieces (about 1cm squares). Wash the bell peppers and onion, remove the seeds, and julienne them to match the length of the burdock. Finely chop the green onion. Add the prepared fish cake, bell peppers, onion, and green onion to the pan with the seasoned burdock. Increase the heat to high and stir-fry quickly for about 1-2 minutes to maintain a crisp texture of the vegetables.
Step 5
Finally, sprinkle some sesame seeds on top for added nutty flavor. Give everything a final toss to combine. Your delicious burdock stir-fry is now complete! It can be enjoyed immediately while warm, or chilled and served as a side dish.
