Savory and Rich Egg Yolk Jang (Marinated Egg Yolks)
Experience the Deliciously Salty and Savory Egg Yolk Jang!
While making soy sauce marinated shrimp, I decided to whip up some simple egg yolk jang for a quick rice accompaniment! This recipe offers a delightful balance of savory and rich flavors, perfect for elevating your steamed rice.
Main Ingredients- 8 eggs (use fresh eggs for best results)
- 1 bowl of warm rice
- A little sesame oil (adjust to taste)
- A sprinkle of sesame seeds (for garnish)
Marinade Ingredients- 4 dried shiitake mushrooms (for deep umami)
- 4 dried anchovies for broth (adds a clear, refreshing taste)
- 1 apple (wash thoroughly, including peel, and cut into large pieces)
- 2 onions (cut into large pieces)
- 1 stalk of green onion (using both white and green parts is recommended)
- 1 handful of red chili peppers (or green chili peppers) (for a clean, mild spiciness)
- 3.5 cups of water (approx. 700ml)
- 1 cup of soy sauce (approx. 200ml) (use regular soy sauce, not low sodium)
- 2 tablespoons of fish sauce (like Kkanari Aekjeot) (enhances the savory notes)
- 1 cup of rice wine or mirin (approx. 200ml) (removes fishy odors and adds flavor)
- Generous amount of black peppercorns (for aromatic depth)
- 2 whole heads of garlic (can be used whole or sliced)

Cooking Instructions
Step 1
First, let’s make the delicious marinade for the egg yolks. In a pot, combine 3.5 cups of water with the washed green onion, dried shiitake mushrooms, anchovies, and red (or green) chili peppers.
Step 2
Add the apple, cut into large chunks (skin on), and the onions, also cut into large pieces. You can add the whole garlic heads or thinly sliced garlic cloves.
Step 3
Now, pour in 1 cup of soy sauce, 2 tablespoons of fish sauce, and 1 cup of rice wine or mirin. Add a generous amount of black peppercorns for an aromatic boost. (Tip: If you’re making soy sauce marinated shrimp at the same time, you can adjust the soy sauce quantity to make a larger batch for both. The ratio provided is for approximately 8 egg yolks.)
Step 4
Once all ingredients and seasonings are in the pot, bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 15-20 minutes, allowing the ingredients to fully infuse their flavors into the liquid. You’ll extract delicious essence from the vegetables and fruit.
Step 5
After simmering and extracting the flavors, turn off the heat. Strain the mixture through a fine-mesh sieve to collect only the clear soy sauce. Discard the solids.
Step 6
Let the strained soy sauce cool completely. It’s crucial to use lukewarm or completely cooled soy sauce, as hot liquid can cook the egg yolks prematurely.
Step 7
While the soy sauce is cooling, prepare your eggs for separating the yolks. Using fresh eggs will make the separation process much easier.
Step 8
Take an empty plastic water bottle. Gently squeeze it to remove some air, then slightly pinch the opening to create a narrow spout. (This technique is the secret to cleanly separating yolks!)
Step 9
Carefully crack an egg into a bowl, ensuring the yolk remains intact. Bring the pinched opening of the water bottle close to the yolk. Then, release the pinch on the bottle. The slight vacuum created will gently suck up the egg yolk into the bottle.
Step 10
Gently transfer the separated egg yolks into a clean, airtight container or glass jar. Repeat this process for all 8 eggs.
Step 11
Pour the completely cooled soy sauce over the egg yolks, ensuring they are fully submerged. This allows the yolks to marinate evenly.
Step 12
Cover the container and refrigerate for about 1 hour. After an hour, carefully flip the egg yolks over in the marinade. This ensures the marinade penetrates evenly. Continue to marinate for another 2-3 hours for best results.
Step 13
Serve a bowl of warm rice. Place 1-2 marinated egg yolks on top. Drizzle with 1-2 tablespoons of the marinade liquid, according to your preference. Finish with a drizzle of sesame oil and a sprinkle of sesame seeds.
Step 14
Mix the yolk, rice, and marinade together and enjoy! The salty, rich, and creamy flavor is absolutely delightful.
