Introducing a 100% vegan recipe made from okara, a representative soy food! These okara pancakes are wonderfully savory and nutty, making them not only healthy but also satisfyingly filling. Enjoy a wholesome meal with this delightful dish.
Okara Pancake Ingredients- 150g Okara (soy pulp), fresh
- 1/2 Onion, finely chopped
- 1 Cheongyang chili pepper, deseeded and finely chopped (optional, for heat)
- 1/2 Tbsp Sugar
- A small amount of Scallions, thinly sliced
- Pinch of Black pepper
- 1 tsp Salt
- 1/2 Tbsp Oyster sauce (for depth of flavor)
- 4 Tbsp Potato starch (for binding)
- 1 Tbsp Perilla oil (for nutty aroma, or use sesame oil)
Cooking Instructions
Step 1
In a large bowl, combine 150g of fresh okara, 1/2 finely chopped onion, 1 finely chopped Cheongyang chili pepper, 1/2 Tbsp sugar, a small amount of sliced scallions, a pinch of black pepper, 1 tsp salt, 1/2 Tbsp oyster sauce, 4 Tbsp potato starch, and 1 Tbsp perilla oil. Mix everything together.
Step 2
Using a spoon or spatula, mix and knead the ingredients thoroughly until well combined and a cohesive mixture forms. The potato starch will help bind everything together nicely. Ensure there are no dry lumps.
Step 3
Take spoonfuls of the mixture and shape them into small, flattened patties, similar to Korean ‘tteokgalbi’ or small burgers. The mixture should hold its shape well due to the potato starch. You should be able to make about 10 to 12 pancakes.
Step 4
Heat a generous amount of cooking oil in a frying pan over medium heat. Once the pan is hot, carefully place the okara patties into the pan.
Step 5
Cook for a few minutes until the bottom side is golden brown and slightly crispy. Then, carefully flip each pancake to cook the other side.
Step 6
Continue to cook until both sides are beautifully golden brown and the pancakes are cooked through. They should have a lovely, slightly crisp exterior.
Step 7
Transfer the cooked okara pancakes to a serving plate. These easy-to-make, delicious, and healthy vegan pancakes are perfect for a light meal or a satisfying snack. Enjoy!
