Main Ingredients- 2 fresh eggs
- 1/6 onion, finely chopped
- 4 Tbsp canned sweet corn, drained
Seasoning- 1 Tbsp anchovy sauce (or fish sauce)
- 1 Tbsp anchovy sauce (or fish sauce)
Cooking Instructions
Step 1
In a bowl, crack 2 fresh eggs and whisk them gently until well combined. Avoid over-whisking to maintain a tender texture.
Step 2
Add 1 tablespoon of anchovy sauce to the whisked eggs for a savory depth of flavor. Stir in the finely chopped onion. Chopping the onion finely will give it a pleasant texture when cooked.
Step 3
Add 4 tablespoons of canned sweet corn, lightly drained, to the egg mixture. Stir everything together gently. The burst of sweetness from the corn kernels adds a wonderful dimension to the pancake.
Step 4
Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Ladle about one spoonful of the batter per pancake onto the hot pan, forming small, round shapes.
Step 5
Cook until golden brown on both sides. Flip carefully once the bottom is set and golden. If the heat is too high, the outside might burn before the inside is cooked. Adjust the heat to medium if necessary to ensure even cooking. Serve immediately while warm for the best taste.
