Easy and Delicious Homemade Braised Pork Recipe (Great for Side Dishes & Lunchboxes!)
Make this hearty and delicious braised pork at home! It’s tender, flavorful, and a perfect side dish that everyone will love.
Main Ingredients- 500g pork (shoulder or leg cut recommended)
- Pinch of black pepper
- 1 green onion
- 1/2 onion
- 1/2 cup soy sauce
- 1/3 cup soju (or cooking wine)
- 2 Tbsp sugar
- 6 cloves garlic
- 5 dried chili peppers (or fresh chili peppers)
- 2 cups water

Step 1
Here’s how to make delicious braised pork that’s perfect as a hearty side dish or a lunchbox treat! I’ll share the secret to making it tender and free of any gamey odors.
Step 2
Cut the pork into pieces about 3-4 cm long, slightly longer than your finger. Make 2-3 shallow cuts on the surface of the meat. This helps the meat cook evenly and absorb the marinade better.
Step 3
Place the cut pork in a pot and cover it with water. Bring to a boil over medium heat. Boiling the pork first helps to remove impurities and any unwanted odors.
Step 4
Once boiled, rinse the pork thoroughly under cold running water to remove any scum. Gently pat the pork dry with paper towels. You can then either slice it into bite-sized pieces or shred it along the grain with your hands for a wonderfully tender texture. (Shredding it allows the sauce to penetrate more deeply!)
Step 5
Now, let’s make the delicious braising liquid! In a pot, combine 2 cups of water, 1/2 cup of soy sauce, 1/3 cup of soju (or cooking wine), and 2 tablespoons of sugar. Stir well. Add the aromatics to eliminate any gamey smell: 1 green onion (cut into large pieces), 1/2 onion (cut into large pieces), 6 cloves of garlic, and a pinch of black pepper. Bring to a boil over high heat, then reduce to medium-low and simmer for about 5 minutes. After simmering, remove and discard the green onion and onion pieces. (Leaving them in too long can result in a bitter taste!)
Step 6
Add the prepared pork and 5 dried chili peppers (or fresh ones) to the braising liquid. Cover the pot and simmer over low heat for 20-30 minutes, allowing the flavors to meld and the sauce to reduce. Stir occasionally to ensure the pork is evenly coated in the sauce. Cook until the sauce has thickened to your desired consistency.
Step 7
Your delicious braised pork is ready! Serve it over warm rice for an incredibly satisfying meal. Store leftovers in the refrigerator and enjoy it for days to come.
