Main Ingredients- 2 fresh mackerel
- 1/4 Korean radish (about 300g)
- 1 large green onion
- 1 onion
- 500ml water (approx. 2 cups)
Seasoning Ingredients- 4 Tbsp gochugaru (Korean chili flakes)
- 4 Tbsp soy sauce
- 2 Tbsp sugar
- 2 Tbsp cooking wine (mirin)
- 2 Tbsp plum extract
- 2 Tbsp coarse sea salt (or substitute with soup soy sauce)
- 3 Tbsp minced garlic
- Pinch of black pepper
- 4 Tbsp gochugaru (Korean chili flakes)
- 4 Tbsp soy sauce
- 2 Tbsp sugar
- 2 Tbsp cooking wine (mirin)
- 2 Tbsp plum extract
- 2 Tbsp coarse sea salt (or substitute with soup soy sauce)
- 3 Tbsp minced garlic
- Pinch of black pepper
Cooking Instructions
Step 1
First, let’s prepare the delicious seasoning sauce that will bring out the best flavor in our braised mackerel. In a wide bowl, combine 4 Tbsp gochugaru, 4 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp cooking wine, 2 Tbsp plum extract, and 2 Tbsp coarse sea salt. Mix them well. You can also use soup soy sauce instead of coarse sea salt if you prefer. Feel free to adjust the soy sauce quantity according to your taste.
Step 2
Add 3 Tbsp of minced garlic to the seasoning for extra flavor, and a pinch of black pepper for aroma. Stir everything together until well combined to complete the seasoning sauce. Keep it aside for now.

This pre-made sauce is key to achieving a deep and rich flavor in the braise. We’ll set it aside for a moment.
Step 4
Now, let’s prepare the pot for braising. In a sufficiently large pot with a thick bottom, lay down thinly sliced Korean radish. The radish will help eliminate any fishy smell from the mackerel as it cooks, and it will become tender and sweet as it absorbs the sauce.
Step 5
Cut the cleaned mackerel into 2 or 3 pieces each, making them a manageable size for eating. Arrange the mackerel pieces on top of the radish. Placing them with the skin side down can help prevent the flesh from breaking apart.
Step 6
Generously top the mackerel with thickly sliced onion. The sweetness of the onion will complement the fish beautifully. Now, pour the prepared seasoning sauce evenly over the mackerel and radish.
Step 7
It’s time to add water for braising. Pour about 500ml of water around the edges of the pot, enough to partially submerge the mackerel. Be careful not to add too much water, as this can dilute the flavor. Adjust the amount as needed.
Step 8
Bring the stew to a boil over high heat, then reduce the heat to medium-low. Cover the pot with a lid. You can add diagonally sliced green onions and red chili peppers (optional) on top for added color and flavor. Let it simmer gently for about 25-30 minutes until the sauce has reduced. Periodically, open the lid and spoon some of the broth over the mackerel to ensure even cooking and moisture. Finally, taste the stew and add salt or soy sauce if needed to adjust the seasoning. And it’s done!

Your delicious braised mackerel with radish is ready! Serve it hot with a bowl of steamed rice and enjoy. Don’t forget to try mixing some rice into the leftover sauce – it’s incredibly tasty!
