  • 1 Korean green chili pepper (cheongyang chili), finely chopped (seeds removed for less heat)
  • 1 packet Sari-Gomtang instant noodles (including the flavor packets)
  • 3 tablespoons olive oil
  • 350ml milk
  • 100ml heavy cream
  • 1 slice processed cheese

Let’s start by preparing our aromatic base. Peel and thinly slice the onion into slivers. For the garlic, peel the cloves and then slice them thinly into ‘chips’ or ‘coins’ – this allows their flavor to infuse beautifully into the oil. Finely chop the Korean green chili pepper; if you prefer less spice, remove the seeds first. You can adjust the amount based on your heat preference.

Peel the garlic cloves, then slice them thinly into flat pieces (garlic chips). Slicing them this way will help their fragrance and flavor to be extracted more effectively when sautéed in olive oil.

Wash the Korean green chili pepper, remove the stem, and shake out the seeds if you want a milder heat. Then, chop it finely. You can add more or less depending on how spicy you like your pasta.

Now, let’s get our star ingredient ready: the Sari-Gomtang noodles. Make sure to keep the dried vegetable packet and the powder soup packet from the noodle package. You’ll only need half of the powder soup for this recipe. The noodles will be cooked directly in the sauce, so keep them as they are for now.

Heat 3 tablespoons of olive oil in a wide pan over medium-low heat. Once the oil is warm, add the sliced garlic and sliced onion. Sauté gently, stirring occasionally, until the garlic is fragrant and lightly golden, and the onions have softened and become translucent. This process builds a delicious flavor base.

Once the onions are translucent and you can smell the fragrant garlic, pour in the 350ml of milk. Add half of the Sari-Gomtang soup powder and the Sari-Gomtang noodles to the pan. Increase the heat to medium-high and bring the mixture to a gentle boil. Once boiling, reduce the heat to medium and stir to separate the noodles as they begin to cook.

As the noodles cook, the sauce will start to thicken. When the noodles are about 60% cooked (this usually takes about 3-4 minutes), add the 100ml of heavy cream, the slice of processed cheese, and the chopped green chili pepper. Stir gently until the cheese melts and the sauce becomes rich and creamy.
