Ingredients

  • 8 imitation crab sticks
  • 1/4 carrot
  • 1/2 onion
  • 1 egg
  • 1 Tbsp cooking oil
  • 2 bowls of cooked rice
  • 1 Tbsp chicken stock
  • 1 Tbsp oyster sauce
  • 1 tsp salt
  • 750ml water
  • 1/2 Tbsp sesame oil

Cooking Instructions

First, finely mince half of the onion. Mincing it very finely will deepen the flavor of the porridge.

Next, mince 1/4 of the carrot as finely as possible. The carrot will add sweetness and color to the porridge.

Gently shred the 8 imitation crab sticks lengthwise. Shredding them into appropriate sizes is better than making them too fine, as it preserves the texture.

In a separate bowl, whisk 1 egg until well beaten. Ensure the chalazae (the stringy bits) are removed for a smoother texture.

Heat a pot over medium-high heat and add 1 Tbsp of cooking oil. Add the minced onion and carrot and sauté for about 3-4 minutes until the vegetables become translucent and fragrant. Be careful not to burn them.

Once the vegetables are slightly softened, add 2 bowls of cooked rice to the pot. Pour in about 550ml of water. Use a spatula to break up any clumps of rice, ensuring it’s evenly dispersed in the water.

Bring the mixture to a boil. Once it starts to bubble, stir in 1 Tbsp of chicken stock for added savory flavor.

Next, add 1 Tbsp of oyster sauce to season. Reduce the heat to medium. Stir occasionally to prevent the porridge from sticking to the bottom.

Add the remaining 200ml of water, bringing the total water to 750ml. Continue to simmer the porridge over medium heat.

Check if the carrots are tender. Season with 1 tsp of salt. Taste and add more salt if needed.

Add all the shredded imitation crab sticks to the pot. Gently mix them in, being careful not to break them up too much.

Once the porridge has reached your desired consistency, reduce the heat to low. Slowly drizzle the beaten egg in a circular motion over the surface. Do not stir for about 1 minute, allowing the egg to cook and form delicate ribbons. Then, gently stir once or twice to incorporate, and immediately turn off the heat. This will result in a silky, perfectly cooked egg.
