I went to the local market late in the day and found spinach being sold for an amazing price of 1,500 won for two bunches! I quickly grabbed some and decided to make a delicious miso soup. This soup is incredibly refreshing, featuring the freshness of spinach and the soft texture of tofu, creating a beautifully mild and clean broth.   • 1/4 block of soft tofu (approx. 100g)
  • 1 Tbsp minced garlic (15ml)

The spinach I got today is quite large, so I think it would be much tastier in a soup rather than as a side dish. Trim and wash the spinach thoroughly under running water, ensuring all dirt is removed. Cut it into bite-sized pieces, about 3-4 cm long.

The key to a delicious miso soup is a flavorful broth. In a pot, combine 3 cups of water, dried anchovies, and a piece of dried kelp. Bring to a boil over medium heat. The umami from the anchovies and the freshness from the kelp will add depth to the soup’s flavor.

Once the water is boiling vigorously, immediately remove the kelp. Boiling kelp for too long can make the broth bitter, so be mindful. Now, dissolve the soybean paste into the pot, preferably through a sieve to ensure a smooth consistency without lumps. Once the soybean paste is mostly dissolved, add all the prepared spinach.
