A Refreshing and Healthy Korean Side Dish: Wild Chives Salad with Ssamjang
Vibrant green vegetable side dishes are always a welcome addition to any meal! Today, we’re making a delightful Ssamjang (Korean savory soybean paste) salad with wild chives (chamnamul). This dish offers a wonderful balance of earthy flavor and a slightly bitter, herbaceous aroma.
Main Ingredients- 300g Wild Chives (Chamnamul)
Seasoning- 1.5 Tbsp Ssamjang
- 1/2 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Sesame Oil
- 1.5 Tbsp Ssamjang
- 1/2 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, prepare the wild chives by trimming off the roots and removing any wilted leaves. Bring a pot of water to a rolling boil. Briefly blanch the wild chives for about 15-20 seconds. Be careful not to overcook them, as they can become mushy. Immediately transfer the blanched chives to cold water or rinse them under running water to quickly cool them down, which helps maintain their crisp texture.
Step 2
Gently squeeze out any excess water from the cooled wild chives. Then, cut them into bite-sized pieces, about 5cm (2 inches) long. Squeeze out the water again, but this time, be gentle. You want to remove most of the water without crushing the chives, just enough so they aren’t dripping wet.
Step 3
Place the prepared wild chives in a mixing bowl. Add the ssamjang, toasted sesame seeds, and sesame oil. Gently toss and mix everything together with your hands until the dressing evenly coats the chives. Be careful not to over-mix, as this can make the chives taste raw. Mix until well combined, and your delicious Wild Chives Salad with Ssamjang is ready to be served!
