My husband always enjoys a soup with his meals, so this morning, I prepared a comforting bowl of dried leafy green soup using large dried anchovies. This soup is packed with the umami of anchovies and the fresh, mild flavor of dried leafy greens, making it a perfect, nourishing start to the day. Its rich and savory broth is sure to be a hit!
Ingredients- 1 bundle of dried leafy greens (about 100-150g)
- 6 cups of kelp broth (approx. 1.2L)
- 15 large dried anchovies (for broth)
- 1 Tbsp fermented soybean paste (miso)
- 2 Tbsp minced green onion
Cooking Instructions
Step 1
Prepare the Anchovy Broth: In a pot, combine the large dried anchovies and 6 cups of kelp broth. Bring to a boil over medium heat, then let it simmer for about 10 minutes to extract the savory flavor from the anchovies. Remove the anchovies to create a clear, rich broth.
Step 2
Prepare the Dried Leafy Greens: Thoroughly wash the dried leafy greens under running water to remove any dirt or debris. Trim off the tough root ends. Chop the greens into bite-sized pieces, about 3-4 cm long. For thicker stems, gently pound them with the back of a knife to tenderize them.

Cook the Greens: Once the anchovy broth is boiling, add all the prepared dried leafy greens. Cook for about 10 minutes, or until the greens are softened and wilted, allowing their natural sweetness and nutrients to infuse into the broth. Ensure they are cooked thoroughly.
Step 4
Prepare the Green Onion: Finely chop the washed green onion. This will add a fresh aroma and a hint of sweetness to the soup.

Season with Fermented Soybean Paste: Stir in 1 tablespoon of fermented soybean paste (miso) into the simmering soup. Once the paste is dissolved and the soup begins to boil again, taste and adjust the seasoning by adding more paste if needed, according to your preference. Avoid boiling the soup for too long after adding the paste to maintain its clear flavor.
Step 6
Add Green Onion and Finish: Finally, add the minced green onion to the pot and simmer for another moment. The fresh scent of the green onion will spread throughout the soup, enhancing its overall flavor.
