Step 1

First, prepare the zucchini. If using regular zucchini, wash it thoroughly under running water, trim the ends, and slice it into bite-sized pieces, about 0.7 cm thick, in a half-moon shape. If you’re using mature zucchini, remove the skin and seeds and slice it into larger chunks. Sprinkle the sliced zucchini with 1 tablespoon of coarse sea salt and gently toss. Let it sit for 10 minutes to draw out moisture. This step wilts the zucchini, prevents excess water during stir-frying, and seasons it, making it tastier. After salting, rinse the zucchini lightly under cold water and squeeze out any excess moisture.

Step 2

Clean the king oyster mushrooms, trim off the tough base, and then slice them lengthwise to match the thickness of the zucchini, or cut them into bite-sized pieces. Bring a pot of water to a boil. Blanch the king oyster mushrooms for about 30 seconds to 1 minute. Briefly blanching helps remove any earthy smell and enhances their chewy texture. Drain the blanched mushrooms and rinse them in cold water before setting aside.

Step 3

Now, let’s start the stir-frying process. Heat 1 tablespoon of olive oil (or your preferred cooking oil) in a pan over medium-high heat. Add the salted zucchini and stir-fry until it starts to soften and become slightly translucent, about 2-3 minutes. The natural sweetness of the zucchini will begin to release as it cooks.

Once the zucchini is nearly cooked and most of the liquid has evaporated, add the prepared king oyster mushrooms to the pan. Stir well to combine them with the zucchini.

Stir-fry for another 1-2 minutes until the mushrooms are cooked through. Turn off the heat. Just before turning off the heat, drizzle in 1 tablespoon of sesame oil.
