When fresh shiitake mushrooms, known for their chewy yet tender texture, are simply stir-fried, they transform into a delicious and nutritious side dish for the whole family. This dish, with its savory sweet-and-salty sauce, is so good that even children will eat it up with their rice! Using plump, fresh shiitake mushrooms grown by my parents, this dish is quickly stir-fried with an oyster sauce-based seasoning. Thanks to the mushrooms’ natural umami, you can create a delicious dish with minimal seasoning. Shiitake mushrooms contain guanylic acid and glutamic acid, which give them their inherent savory flavor and make them excellent for creating rich broths. Not only are they tender and flavorful, but they are also rich in Vitamin D, which is often lacking in our diets, making them a nutritious ingredient for both adults and growing children. With minimal prep required – just a quick chop of scallions – this recipe focuses on bringing out the natural flavors and nutrients of shiitake mushrooms. We’ll guide you step-by-step on how to create this simple yet satisfying stir-fry using only the mushroom’s natural moisture and a few key seasonings.
Ingredients- 200g fresh shiitake mushrooms (cleaned and trimmed)
- 3 Tbsp cooking oil
- 1/2 large scallion
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1 Tbsp corn syrup (or honey)
- 1.5 Tbsp sesame oil
- Sesame seeds, for garnish
Cooking Instructions
Step 1
To start building flavor, let’s prepare the scallions for making scallion oil. Finely chop the scallions. That’s all the vegetable prep needed, making it as simple as the seasoning ingredients.
Step 2
Instead of washing shiitake mushrooms vigorously under running water, which can diminish their flavor, it’s best to wipe them clean with a damp cloth. However, if there’s visible dirt on the cap, a quick rinse under cool water is okay.
Step 3
Gently pat the mushrooms dry and prepare to trim the tough, woody stem ends.
Step 4
Carefully cut off the bottom part of the stem, making sure not to detach the cap. You can save these trimmed stems to add extra flavor to broths or stocks.
Step 5
Slice the cleaned shiitake mushroom caps into approximately 3mm thick pieces. Your mushroom preparation is now complete, ready for stir-frying.
Step 6
Heat a pan over medium heat and add about 3 tablespoons of cooking oil. Let the oil get nice and hot.
Step 7
Add the chopped scallions to the hot oil and sauté them over medium-low heat until they turn golden brown and fragrant. This creates a flavorful scallion oil.

Once the scallion oil is fragrant, add the sliced shiitake mushrooms. Increase the heat to medium-high and give everything a quick toss to combine.

Now, add 1 tablespoon of minced garlic to the pan.

Stir-fry everything over medium-high heat for about 1 minute, ensuring the garlic is fragrant and mixed well with the mushrooms.

Time for the sauce: add 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and 1 tablespoon of corn syrup. Stir well to coat the mushrooms and stir-fry over medium-high heat for another 1-2 minutes until everything is well combined. You’ll notice the mushrooms release their own moisture, so no extra water is needed.
Step 12
Finally, turn off the heat. Drizzle in 1.5 tablespoons of sesame oil for a nutty aroma and sprinkle with sesame seeds. This quick side dish is ready! My family loved it so much for dinner that there were no leftovers. The tender and chewy texture makes it a delightful alternative to meat dishes.
