Main Ingredients

  • 5 medium potatoes
  • 1 onion
  • 1/3 carrot
  • 1 green chili pepper (optional)

  • 2 Tbsp grapeseed oil
  • 1 Tbsp salt (adjust to taste)

First, prepare the main ingredients: peel the potatoes, chop the onion and carrot, and finely mince the green chili pepper. Ensure the potatoes are peeled and ready.

Using a knife or a mandoline slicer, thinly julienne all the prepared ingredients. Try to cut the potatoes, onion, and carrot to a similar thickness so they cook evenly.

Heat the grapeseed oil in a frying pan over medium heat. Add the julienned onion and carrot and sauté for 1-2 minutes until fragrant. This step helps to bring out the natural sweetness of the vegetables.

Place the julienned potatoes in a colander and rinse them under running tap water. Rinsing removes excess starch, which prevents the potatoes from sticking together and results in a cleaner, fluffier texture after stir-frying.
