Ingredients- 200g button mushrooms
- 5 cloves garlic
- 2 Tbsp olive oil
- 10g unsalted butter
- 1 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin or sake)
- Parmesan cheese powder, for garnish (optional)

Step 1
Begin by cleaning the button mushrooms. Trim the tough ends of the stems, and then cut each mushroom into quarters. Cutting them into manageable pieces ensures they cook evenly and retain a pleasant texture.

Peel the garlic cloves and slice them thinly into slivers. Slicing the garlic thinly helps it to release its aromatic oils and infuse the dish with a wonderful fragrance as it sautés.

Heat a skillet over medium heat and add 2 tablespoons of olive oil. Once the oil is shimmering, add the sliced garlic. Sauté the garlic gently, stirring occasionally, until it becomes fragrant and lightly golden. Be careful not to burn the garlic, as this will make it bitter.

When the garlic is fragrant, add all the quartered button mushrooms to the pan. Stir well to coat the mushrooms evenly with the olive oil. Sauté the mushrooms until they begin to soften and release some of their moisture, about 3-5 minutes.

Once the mushrooms are about two-thirds cooked, push them to one side of the pan to create a space. Add the 10g of unsalted butter to the empty space and let it melt. Once the butter is melted, add 1 tablespoon of soy sauce and 1 tablespoon of cooking wine (like mirin or sake) into the melted butter.

Allow the soy sauce and cooking wine to sizzle in the butter for about 30 seconds to a minute. This caramelizes the soy sauce slightly, evaporating the alcohol from the cooking wine and intensifying the savory and slightly sweet flavors. Then, toss everything together thoroughly to ensure the mushrooms are evenly coated with the delicious sauce.

Transfer the sautéed mushrooms to a serving plate. For an extra touch of flavor and visual appeal, sprinkle a little Parmesan cheese powder over the top.
