Simple and Delicious Sautéed King Oyster Mushrooms – A Perfect Side Dish

Today, I’m sharing a staple side dish that’s perfect for your everyday meals. For the past few days, I’ve been focusing only on main courses, and realized my refrigerator was completely bare of side dishes! I started to blame myself for being such a ‘neglectful housekeeper,’ but then decided to turn over a new leaf and get back to making side dishes. I managed to whip up three different side dishes this morning before heading out, though! Today, I’ve made a delicious stir-fry using king oyster mushrooms, which are known for their wonderfully chewy texture. While I have other mushrooms like button and enoki in my fridge, I wanted to start with king oyster mushrooms today. I’ll be sharing other mushroom recipes soon, so please stay tuned! Let’s get started with this king oyster mushroom stir-fry recipe!
Ingredients- 3 King Oyster Mushrooms
- 1 Bell Pepper
- 1/2 handful Carrot
- 1/3 Onion
- 1/2 Tbsp minced Garlic
- Pinch of Salt
- Pinch of Black Pepper
- 1/2 Tbsp Sesame Oil
- A little Cooking Oil
Cooking Instructions
Step 1
First, gently wipe any dirt off the king oyster mushrooms with a damp paper towel. Washing them with water can make them mushy and absorb too much liquid, which I find detracts from their chewy texture. Slice the king oyster mushrooms into about 0.5 cm thick rounds, then cut them into thick julienne strips. Slicing them a bit thickly helps maintain a pleasant chewiness after cooking, as they can break apart if cut too thin.

Step 2
Prepare a small amount of carrot, just enough to add a pop of color. Julienne the carrot into strips that are about 0.3 cm thick. This thickness will ensure they remain slightly crisp after stir-frying.

Step 3
Peel and wash the onion, then slice it into julienne strips about 0.5 cm thick. Remove the seeds from the bell pepper, wash it, and then slice it into long strips, similar to how you’d prepare it for Japchae. These vegetables will add great flavor and texture to the dish.

Step 4
Now, heat a small amount of cooking oil in a wide frying pan. Add the minced garlic and sauté over low heat. It’s important to use low heat to prevent the garlic from burning and to allow its aroma to develop gently. Once you start smelling the garlic, get ready to add the next ingredients.

Step 5
When the garlic is fragrant, add the julienned carrots and stir-fry briefly. Stir-frying the carrots in oil will help bring out their natural sweetness and enhance their vibrant color.

Step 6
Once the carrots are slightly softened, add the sliced onions and continue to stir-fry together. Cooking the onions until they become translucent will add more sweetness to the overall dish.

Step 7
Next, add the thick-cut king oyster mushrooms. Now, increase the heat to medium-high. Cooking the mushrooms over higher heat right after adding them helps prevent them from releasing too much moisture, thus preserving their chewy texture. Once the mushrooms begin to soften slightly, add a pinch of salt and a pinch of black pepper to season. You can taste and adjust the seasoning according to your preference.

Step 8
Finally, add the julienned bell pepper and stir-fry everything together for just about 1-2 minutes. Bell peppers can become soggy if overcooked, so stir-frying them briefly will keep them nicely crisp. Just before turning off the heat, drizzle in the sesame oil and give it a final mix. This adds a wonderful nutty aroma, completing your delicious sautéed king oyster mushroom dish!
