First, prepare 1 pack (approx. 200g) of king oyster mushrooms. Trim off the tough bottom ends and lightly rinse them under running water. Avoid washing them for too long, as this can diminish their delicate flavor.

Tear the prepared king oyster mushrooms into bite-sized pieces by hand, following their natural grain. Place the torn mushrooms in a bowl, add 0.5 to 1 teaspoon of coarse salt, and gently massage them. Let them sit for 5 to 10 minutes; this process draws out excess moisture, resulting in a chewier texture.
