Try making a flavorful sautéed chwinamul by boiling aged chwinamul until tender. This recipe brings out the natural aroma and taste of this healthy mountain vegetable.
Main Ingredients- Boiled Chwinamul (Korean Aster) 300g
Seasoning Ingredients- 3 Tbsp Korean Soup Soy Sauce (Gukganjang)
- 1 Tbsp Minced Green Onion
- 1 Tbsp Minced Garlic
- 2 Tbsp Perilla Oil (Deulgireum)
- 1 Tbsp Chili Oil (Gochugireum)
- 1/2 Tbsp Toasted Sesame Seeds
- 3 Tbsp Korean Soup Soy Sauce (Gukganjang)
- 1 Tbsp Minced Green Onion
- 1 Tbsp Minced Garlic
- 2 Tbsp Perilla Oil (Deulgireum)
- 1 Tbsp Chili Oil (Gochugireum)
- 1/2 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare 300g of boiled chwinamul. Rinse it lightly under running water to remove any dust. Squeeze out excess water, but not completely dry; leaving some moisture will help the seasoning adhere better and keep the chwinamul tender.
Step 2
Place the prepared chwinamul in a bowl. Add 1 Tbsp minced garlic, 3 Tbsp Korean soup soy sauce, 2 Tbsp perilla oil, and 1 Tbsp minced green onion. Ensure all the seasoning ingredients are evenly distributed.
Step 3
Using your hands, gently but firmly mix the ingredients by pressing them together. Mix thoroughly to ensure the seasoning penetrates the chwinamul without mashing it. This is key to a well-seasoned dish.
Step 4
Heat a pan over medium heat and add the seasoned chwinamul. Stir-fry for about 1 minute, then add half a cup of water (about 100ml) and continue to cook. Adding a little water prevents the chwinamul from burning and helps the seasoning to meld. Next, add 1 Tbsp of chili oil for a deeper flavor and vibrant color.
Step 5
Continue to sauté over medium heat for about 5-7 minutes, or until the chwinamul is tender and the flavors have melded. Sprinkle with 1/2 Tbsp of toasted sesame seeds for a nutty aroma to finish. Taste and adjust seasoning with more soy sauce if needed (or salt, according to your preference).

Transfer the fragrant sautéed chwinamul to a serving plate. Enjoy this delicious dish with your favorite rice!
